Made lentil and veggie shepherd's pie for dinner tonight! The topping is a mix of low GI potato (Carisma) and cauliflower, to help keep the carb count down. And then lots of cheese of course!

Haha its very easy... I'm lazy, so I cook mine in the microwave. Cut it in half, scoop out the seeds. Pierce it all over with a knife and put it with the cut side down in the microwave for 5 minutes, then flip it for 2. Take it out and wait for it to cool down and then scoop out the spaghetti. I already had prepped turkey in the fridge, so I just dumped some tomato sauce and spinach in a pan and heated it all until it was done while the squash was cooking. Ez pez 10 min meal0 -

Not my best pic, but: back from vacation, back to real cooking. Dinner: grilled artichoke, apple sage (vegetarian) sausage, and a fantastic shredded zucchini & green pea cheater risotto.

Some of my recent meals
Since it's BBQ time we are huge on grilled veggies, lately it's been zucchini and asparagus, we also enjoy kale salad and grilled some whole carrots last night and they are awesome0 -
zucchini frittata
4 zucchini
4 large eggs
50 grams brick cheese (any flavor you want)
pepper to taste
1 tsp extra virgin olive oil
slice zucchinis thin, put aside about 12 slices. cook the rest in a pan with the olive oil. once cooked through remove from heat to let cool. In large bowl whisk the eggs and pepper, stir in the cheese. Preheat oven to 375 once the oven is heated, add the cooled zucchini to the egg and cheese mixture, add to a oven safe dish, top with the remaining zucchini you set aside. bake for 25 minutes. than boil for another 5 minutes to get the top nice and brown. take out of oven, let cool for about 10 minutes, Enjoy0 -

1. Tapas at cata in nyc. Baby pork belly and quail eggs Benedict, deviled egg with a fried oyster, and I don't remember the third one
2. Mozzarella, tomato, eggplant tower with balsamic reduction and arugula
3. House made ricotta with honey and grilled bread
4. Pistachio pesto pizza with mozzarella, ricotta, Parmesan and fennel sausage
5. Oysters!

Dinner: roasted cherry tomatoes over mixed greens with sweet onion dressing, garlic-rubbed ciabatta roll, and (leftover) baked tirali & ricotta pasta
Lunch: raspberry-lime mineral water, spinach salad with black beans, grilled nectarine and green onion, leftover roasted cherry tomatoes, and chipotle vinaigrette, boiled egg, sourdough rye

Oats cooked in a little water with vanilla extract and a pinch of salt, then mixed with powdered milk and stevia. Topped with banana and cinnamon:

@JustineMarie21 Thats so funny you say that.. I've just started experimenting with oatmeal and I've had it more in the last week than the last 5 years combined lol
Salted caramel protein zoats with wf pancake syrup and frozen blueberries
This is a 800 calorie bowl of oatmeal.. I wanted something high in calories/low volume, filling and delicious before a night of dancing and running around.
Again used the salted caramel protein, topped with two tbsp of nuts n more toffee crunch, a salted caramel luna bar and some strawberries
Pumkin vanilla proats with sprinkles, syrup and whipped cream
This was a gamble, but it turned out REALLY good! Tiramisu zoats cooked in strong chocolate nespresso coffee, chocolate protein powder, vanilla yogurt, zested chocolate and dark chocolate chips
(All eaten cold, I dont want hot oatmeal in this heat lol)
