The breakfast that saved me (minus tomatoes adding kale and small amount of bacon)
Cook Time: 5Yield: Makes 2 servings (serving size: 1 burrito)
Good to Know
Make this breakfast burrito even healthier by using egg whites instead of whole eggs to cut back on cholesterol and saturated fat. Use fat-free milk and fat-free cheese to cut out even more fat.
Ingredients
2 large eggs, or equivalent egg substitute
1 tablespoon 1% low-fat milk
1 teaspoon chopped fresh cilantro
1/8 teaspoon kosher salt
Dash of coarsely ground black pepper
Cooking spray
1/2 teaspoon butter
4 tablespoons reduced-fat shredded cheddar cheese, divided
2 (8-inch) fat-free flour tortillas, heated
4 tablespoons chopped seeded tomato, divided
2 tablespoons bottled chunky salsa, divided
Preparation
1. Whisk the first 5 ingredients (through pepper) in a medium bowl.
2. Coat a medium nonstick skillet with cooking spray, and melt butter over medium heat. Add the egg mixture, and stir with a heatproof rubber spatula to scramble.
3. Sprinkle 2 tablespoons cheese down the center of one tortilla; top with half of the scrambled egg, 2 tablespoons tomato, and 1 tablespoon chunky salsa.
4. Roll up burrito-style (fold bottom up and sides to center). Repeat with remaining ingredients.

My Monday morning breakfast burrito ritual: fry five pieces of bacon. Now when it comes to bacon to each their own but I refuse to buy bacon in a pouch; so I get the deli thick cut bacon! After cooked set aside to cool on paper towels. In bowl add 6 large eggs or 10 egg whites, 1/4 cup roughly of milk, 1 cup chopped finely kale, 1/2 cup shredded cheese, few sprigs chopped chives, season is to taste and half a small minced shallot, pan scramble. Then set aside to cool. I use whole wheat or regular flour 8 inch tortillas, bring one out, break one piece of bacon in half place in center of tortilla add pinch of pepper jack cheese on bacon, add two small spoonfuls of eggs. to fold it bring both left an right side in to touch, while holding that in place bring the side closest to you up (like a gift) then hold it and roll tight to bring the front last flap back and it should look like a mini burrito!! To store for the week I wrap in a paper towel (once cooled) then wrap in parchment paper or otherwise known as baking paper then I put them individually in a sandwich bag, they stay good in the fridge all week !! It takes 1-130minuets MAX to reheat... Then enjoy !!! Because I do0
