Thai chicken coconut curry with red rice and broccoli. My husband is indian so we have lots and lots of spices in the house and about 10 cans of coconut milk all the time. I am italian and egyptian so i can work mahic with veggies.
Eastern and mediterranean food is wonderful for low cal cooking.
I dont even shop at american markets. I shop at mid east and indian markets. Veggies are fresher, and about 70% cheaper than those crook chain markets.0 -
@crazyravr -What a great idea for the golumpki (a favorite of mine since childhood). I would have never thought to add mushrooms to the sauce, and I'll bet the chicken is fantastic too. Are your golumpki stuffed with ground beef? My mother always makes hers with beef and rice, but I sometimes like to shred veggies like squash and carrots and add it to the mix in place of the rice. I have also tried quinoa.0

Teriyaki kabobs and orange sauce seitan.
Kabobs were roughly 200 calories and the seitan was 280 so around 480 calories-ish. More of a light lunch, but it did the trick for dinner last night! The kabobs were super delicious in the teriyaki sauce and baked to perfection. Yum!0 -

Wheat destroys my intestines, so I can't eat regular waffles. But the alternative is just as good: Gluten-free waffles with mini chocolate chips, shredded coconut and chia seeds. Served with butter and a drizzle of honey. Mmmm...

My lunch today is flounder from last night that I baked in panko crumbs with a lot of cajun seasoning on it. I'm not sure what side dish I will have with it. Nothing fancy but very delicious!
