    I'm really bad at making low calorie dinners

    But I like making spaghetti sauce from scratch with wine and making chicken meatballs with cheese and spinach in them

    I also like making spicy burritos with quacomole replacing sour cream and topping it with Pico de Gallo, cheese and Taco sauce

    Baked chicken breast with a TON of sauteed vegetables. Pretty much pretend I'm making a stirfry, just don't add rice.

    Chicken fajitas which is just chicken with bell pepper, onions and homemade fajita seasonings..all stir fried (cooking spray only no oil). I do fat free refried beans and when it is a running day the next day I do add chips and salsa for a carb up!

    I love the pining mama website for quick easy dinners and chicken recipes. I can turn those recipes into healthier options by adding more protein, quick and easy and pretty cheap.

    I also do a lot of crockpot recipes (especially in the winter).

    Eat a lot of Swahi (white fish) and Tilapia fish with sweet potatoes, veggies. And eat chicken alternate days.

    Seafood medley (scallops, shrimp, calamari) fettuccini with a lemon butter parmesan sauce.
    Venison carbonnade with steamed rice

    Beans (which ever I have on-hand), andouille sausage, zucchini, and onion over rice. It's about 350 cals per serving. Very yummy and satisfying.

    Chicken tacos or chicken and veggies. Either way, it usually ends up being chicken and vegetables in some incarnation or another. That's kind of sad now that I think about it, lol. I eat that a lot...
