I'm here!!! Hi ^_^ Just became vegan again a few days ago6
-
I've never been vegan, but I've always enjoyed cooking and eating vegan meals. I'm following this thread because my son (he's preteen) just told me today that he wants to try being vegan.
We started by listing some of the foods and meals he already enjoys that are vegan, and a few that we can modify easily.5 -
I'm a vegetarian and about 70 - 80% vegan normally. Currently in maintenance as I've been on the road for 3 months. I logon daily... but alas no food log.2

I went vegetarian in 1976 for six years then added seafood and kept that diet until a few years ago when I went vegan, then I added eggs and salmon, now I'm back to straight vegan. I eat a pretty clean diet, though I do eat boca burgers and tofu hotdogs (processed food) - especially in the summer. I always think about the nutritional content of the food I eat and make that a high priority when choosing what to eat.
I'm 60 years old and have a slim build. My energy level is pretty good; I did a 16 mile 2,500ft elevation gain hike two days ago.9 -
Anyone have vegan/vegetarian sandwich ideas for lunch?3
-
If I am doing a really long, hard hike I will take an almond butter and honey or jelly sandwich. I noticed overseas they tend to eat "salad sandwiches" which is bread and condiments with salad ingredients.0

Houmous sandwich with baby spinach and julienned carrots.0

Some of my favorite sandwich components: Hummus, baked tofu/tempeh, seitan, chickpea salad, portobello mushrooms, almond/peanut/cashew butter, BBQ jackfruit, and nut pate.4 -
Thanks everyone for your replies on sandwich ideas for lunch. I will definitely try them. I need a change from rice, beans, & vegs.0

I absolutely love avocado salad sandwiches.. or on toast.. but to be fair I try to avoid bread as much as I can as it bloats me!!

And thanks for all your lovely replies too!! I've been vegan for a year, and I can honestly say I don't miss dairy or eggs at all now!!
I used to eat a lot of dairy.. but alpro is an amazing brand ( in my opinion) I absolutely love the yogurts and ice cream!!
I found a lovely vegan cheese from Tesco, which is my new favourite..

Offhand, without proper research, 400g of tofu (450-ish calories?) would be 50g protein, but that would be a lot of tofu a day. I personally prefer to reach my own protein goal per day (63-93g) with a mix of sources, because I think it's safer from a nutritional point of view.

Working on the vegan thing but a lot of foods don't agree with my biology.0

I'm a vegan - and I'm so much happier but I do admit sometimes I struggle to eat enough calories. I mean huge veggie soups and currys (it's winter here in Australia!) don't have that much in them and there is a limit to how much bread, pasta and rice one can eat during a day... happy to gain new friends if anyone is looking1

All of this. Also load the sandwich with veggies. My go to is protein mixed with a cup or two of mixed vegetables and whatever sauce I'm in the mood for.1 -

I'm vegan, not by choice, but because of an allergy. I'm going to start tracking my food on here. Anyone who wants to follow me, I will keep my diary open. Have you seen the Beyond Meat burgers at Whole Foods? I'm going to try them!2

I have an open diary and always open to friend requests from others if people are curious what I eat3

Me! Vegetarian since 1985 and vegan off and on the past 5 years. Im soy-free due to a soy allergy and try hard to eat as whole and healthy as possible.0

Chickpea salad sandwiches! Sooo good. http://allrecipes.com/recipe/16715/vegetarian-chickpea-sandwich-filling/ (use vegan mayo)
Leftover roasted/grilled veggies plus hummus on a sandwich is quick and easy
Breakfast sandwiches with fried tofu, rice paper bacon, and tomato are great if you have a bit more time1 -

@GoldenEye_ Quorn naked chik'n cutlets are nutritionally pretty similar to chicken -- including in terms of protein/calories. http://www.quorn.us/food/vegan/vegan-chikn-cutlets/1 -

Hey, thanks! I did make the switch to veganism by now by adding more soy products and red lentils to my diet. I'm not that fond of the taste of chicken (it was purely nutritional need), so I don't think I'll be adding meat replacements any time soon, but I guess it's always good to have some good ones ready if you need them!
Went to a japanese restaurant tonight. They really know their tofu and vegetable recipes. I would be a happy person if I could just eat miso soup every night2 -
Im vegan. You can add me and my diary is open. Always happy to chat1

Hi all!
Back on MFP after a while away. Looking to lose weight and I think going vegan would help a lot.
I've been vegetarian for most of my life. However, I'm now pescatarian. I certainly don't eat enough fish to rely on it for protein, though. Im also trying to cut out dairy, but I still do whey protein and yogurt here and there.
I'm looking to creep on other vegan's diaries to get ideas! If that's ok with anyone
