I thought it'd be fun for everyone to share what they're having for dinner! Recipes are welcome but not required.
I'm making Kale, White Bean and Sausage soup from this site:

Fish tacos in soft corn tortillas with mango and avocado salsa and siracha mayo. I use cod loins with a light coating of gluten free flour (only because I am GF) and blackening seasoning, cooked in a cast iron pan with a bit of butter.6

Beef and Broccoli but I'm using summer squash instead of broccoli. Husband having it over rice I am having it over shirataki noodles.1

Made a huge pork loin last week so have been converting it into several meals. Had pork tacos, a pork & mexican rice casserole. Tonight is bbq pork baked with cornbread. Tomorrow is going to be a white chili.4

To stay within my calorie limit, I use just enough olive oil to saute the vegetables for the braised lentils, not the quarter cup that recipe recommends. With steamed veg (broccoli, green beans, carrots) this makes a generously-sized meal for around 500 calories.3 -

Zucchini and ground turkey hash. It is a take on skinny taste turkey stuffed zucchini boats, but less work intensive. Although, the boats are great too !
1 container (20 oz (112g) ea.), Italian Style Seasoned Ground Turkey
1 Medium Onion (148 grams), Onion
4 Medium, Zucchini - Medium
1 oz of white wine
1 tsp, Paprika
1 tsp, Garlic Powder
1 tsp, Ground Marjoram
0.50 oz, Diced Garlic
1 tsp, Italian Seasoning
1 tsp(s), Butter - Salted
1 large, Eggs - White only, raw
0.50 cup (28g), Italian Bread Crumbs
0.50 cup (28 g), 100% Parmesan Cheese Shredded
add butter, onions and garlic in pan, cook on medium/low until soft, add peeled and cubed zucchini, cook for 10 minutes, add one oz of white wine, and let cook down, add turkey and seasonings. Cook until turkey is done and let it cool. Once cooled mix in a bowl with egg white and parmesan cheese. Put in a shallow pan, sprinkle bread crumbs and bake.
Makes 5 servinigs, 299 calories2 -

I'm doing a take on this recipe recipe tonight. Marinated steak, black beans, corn, etc. wrap or bowl (haven't decided yet). Maybe I'll serve it over brown rice!

Tonight, stir fried russet potatoes, carrots, and sweet potatoes along with old leftover pulled pork.
And ice cream.

Mediterranean Fish Stew over brown rice.
No "recipe" to quote. This is similar, but different, each time I prep it.
Tonight: Saute onion (1lg white), green peppers (2), celery (4 stalks), garlic (to taste) to soften. Add can tomato sauce (8oz), can crushed tomatoes with liquid (28oz); I use Hunts No-Salt versions. White wine to taste (4oz). Chopped black olives to taste. Herbs to taste (I used Litehouse Italian dried herbs, dried parsley, dried basil, crushed red pepper flakes). Salt/pepper to taste (I used no salt). Cover. Medium-high heat for 15 minutes to come together. Add fish pieces (tonight a mix of fresh cod and flounder, 1.8lbs). Cook on medium, covered, 15-20+ minutes until fish is cooked through and flakey. Serve. As a "stew" in a bowl by itself, or over brown rice, couscous or whatever.
I'm going to make an MFP recipe for this mix, but, exclusive of the carb, you can see this is a protein and veg dish. With a little wine, LOL.

Tonite I had:
3c baby spinach
1c romaine
1\2 orange bell pepper
lg carrot, grated
2tsp olive oil
2Tbl lemon juice
1\8 tsp black pepper/chipotle blend
1\8 tsp onion powder
2 x 4 square if Aunt Jemima corn bread, whole milk prep
1\2 c drained pinto beans,drained, homemade, cooked with pork stock
for dessert
1\2 ca dark chocolate pudding
1\4 square cannabis brownie
I stll have enough calories, and carbs for milk later with my meds but will be over my sugar by several grm1 -
so far just yogurt. me hungry!

I have some sausages, but I am not sure what I am going to do with them yet. Maybe a casserole, with sweet potato and carrots!1

Tonight I'm making a Thai Chicken curry with basmati rice. for the family.
I use 2 dessert spoonfuls of Red Dragon Red thai curry paste, half a can of coconut milk (serves 4), brown chicken, onion, mushroom and peppers, add the paste/milk and simmer. Its delicious, takes around 30 mins til its ready and comes in a 551 cals.0 -
Homemade egg drop soup with wonton strips and a big (air fryer) egg roll with soy sauce and a 100 calorie snickers for dessert.1
