    for now I think that is what I can get in, if we need more I will do my best. I need to do 2 more miles for the walk/run but I am going to the beach tomorrow, I know I will get it in on sunday if I don't do a really long walk on the beach first

    All done with this week's challenges! I'm spent. I think I pushed myself a little too far. Tomorrow is definitely a day of rest for me. We have a family BBQ with my brother-in-law's family and his mom looks and cooks exactly like Paula Deen.

    I pledge 200 crunches for next week. I can try to do more but, I start school next week.

    My Recipe for Chicken Stuffed Bell Peppers

    Ground Chicken (91/9), 10 oz
    Yellow/Orange/Red Bell Pepper, 2 large
    Yellow Onion, 1/2 cup chopped
    White Mushrooms, 1 cup chopped
    Garlic 3 medium cloves minced
    Extra Virgin Olive Oil, 1T
    Progresso - Bread Crumbs (Italian Style), 1/4 cup

    Preheat oven to 350 degrees F
    Remove bell pepper tops and dice the tops removing the stems
    Saute the chicken, diced pepper tops, onion, mushrooms and garlic in 1T EVOO (add salt and pepper to taste) until the chicken is cooked
    Add 1/8 cup to the bottom of each bell pepper
    Fill the bell peppers with the sauteed mixture
    Spray cookie-sheet with non-stick spray (helps keep bottoms from burning)
    Baked the stuffed bell peppers 30-40 minutes until they are somewhat soft (or to your liking)

    One stuffed bell pepper each is usually more than enough for my BF and me but you can add a side salad and still keep this a very low-cal, healthy meal (you can also play around with the mixture - turkey instead of chicken, add other veggies like celery or zucchini, etc)

    Calories per serving as listed (one stuffed bell pepper): 308

    Here's one of my favorite recipes....


    Honey Chicken Stir-fry

    1 pound boneless skinless chicken breasts, cut into 1 inch pieces
    1 garlic clove, minced
    3 teaspoons olive oil, divided
    3 tablespoons honey
    2 tablespoons reduced-sodium soy sauce
    1/8 teaspoon salt
    1/8 teaspoon pepper
    1 (16 ounce) package frozen broccoli stir-fry vegetable blend
    2 teaspoons cornstarch
    1 tablespoon cold water
    Hot cooked rice


    Directions
    1.In a large nonstick skillet or wok, stir-fry chicken and garlic in 2 teaspoons oil. Add the honey, soy sauce, salt and pepper. Cook and stir until chicken is lightly browned and juices run clear. Remove and keep warm.

    2.In the same pan, stir-fry the vegetables in remaining oil for 4-5 minutes or until heated through. Return chicken to the pan; mix well. Combine cornstarch and cold water until smooth; stir into chicken mixture. Bring to a boil; cook and stir for 1 minute or until thickened. Serve over rice.
