I'm Ukrainian, and every Christmas I make cabbage rolls. They're so good, but such a pain I only make them once a year. These are from last year, almost ready to go into the oven:
We are not Ukrainian but when I was a kid my mom would make those about twice a year in the exact same type of pan. More likely though we'd have Lazy Man's cabbage rolls which was all the stuffing mixed up with chunks of cooked cabbage2 -
I’m looking forward to my homemade lasagna that I only make for Christmas. I made it for the first time about 15 years ago and now it’s a family must-have. Plus the good Italian bread and green goddess salad! I’m also making brownies, lemon bars and caramel m&m bars. I’m salivating just thinking about it!5

Going to be baking ginger molasses cookies, snickerdoodles, and a spicy sweet nut mix. As far as other people's stuff, my mom always makes these ranch seasoning coated pretzels for Christmas that are crazy addictive!5

When my husband explained that British fruit cake has marzipan AND royal icing I thought "All of that together?? This sounds extremely rich!!" although he pointed out that people are served very thin slices.
And I get to eat the marzipan because he can't stand the stuff.
He also wants to try the American fruitcake so that he can understand what all the complaints are about.0 -

I actually prefer the Brit version - it didn't have those darned candied citrons that I don't like. Just nice dried fruit all liquored up.1

I am going to have to pass this year. Am down nearly 50 lbs, and already have three kinds of cookies on the slate. I can control my cookie intake but probably not a nanaimo bars and butter tarts!5 -

Christmas is in mid summer here in Australia, and it's often very hot. My all time favourite hot-weather dessert for the season is fresh mixed berries (in abundance) served with walnut cinnamon crumble and a strawberry date sauce which has been scented with rosewater. It's so simple, truly delicious, and reasonably healthy!3

Homemade caramels. I’ve made (multiple batches) for 37 Christmases. The family is like vultures waiting for me to walk in the door with them.
Our meal is appetizers on Christmas Eve, and everyone brings an appetizer and a tray of homemade cookies and candies to share.4 -

For me it would be an English trifle with sherry. So odd, when I was little I used to think the sherry spoiled it, now I think it is spoiled without it.

@middlehaitch I used to marzipan and ice my cake, but my husband always picks off the marzipan, so I tend not to bother anymore. But as long as there's a chunk of cheese to go with it, I'm happy.
Ahh, sherry trifle. That's my husband's specialty. I think I may have to drop a few subtle hints in the coming days.

Oh man.. ALL THE GOODIES!! But really I look forward to Christmas cookies the most. And chocolate covered deliciousness as well. I'm not sure how much energy I have to do a ton of baking this year though.. Thought I was gonna tackle it this weekend, but I think I'm coming down with the crud that's going around. I'm not sure how everyone will like contaminated Christmas cookies. Anyways.

Nice. My Great Grandmother would make those, along with fattigmann and crowns. Sometimes we'd get bordstabler, too. I'm OK (not great) at making the crowns, but I can't duplicate any of the other ones.1 -
For Christmas parties I always make bread pudding with a bourbon sauce. I think there would be rebellion among my friends if I ever showed up without the bread pudding.1
