I am just finishing a bowl of my variation of this recipe for lunch.
My variation, (if I may):
I use 2 packages of the noodles
I go with 1/2 sprouts and 1/2 snow peas
I add celery
I also add boneless, skinless chicken breast chunks (I'm a protein junkie).
and for the sauce I use Sriracha sauce for the heat
My wife and I both love this and it is VERY satisfying. I had never heard of the noodles until I read this thread and I finally found them at Festival foods in Oshkosh.

They are SO versatile-- I'm glad you found *your* favorite way to prepare them. I keep Sriracha in the house because I do a lot of Vietnamese cooking but I only found it to be "okay" on the shirataki noodles. I guess that's why Baskin-Robbins has 31 flavors!
For ANOTHER variation, try this (I made it the other night):
BUFFALO WING STYLE SHIRATAKI NOODLES
Dry-fry noodles, as described, then add in sauce consisting of 3 ounces of Tabasco, 2-3 tsp Butter Flavored Sprinkles, 1 tsp garlic powder, 1/2 tsp basil. Feel free to substitute your favorite hot sauce and don't be afraid to add a little vinegar to non-vinegar based hot sauces to jazz them up a bit.0 -

I have just discovered bean sprouts as a substitue for pasta. Have had it with broccoli slaw, rotisserie chicken and Newman's Own Low Fat Sesame Ginger Dressing. It's awesome and will definitely try your recipe. Sounds great!0

I've gotta bump this for later. I've taken a look at these noodles before but I guess I heard that they didn't taste real good and smelled real bad. I like the idea of frying them up, which I wouldn't have thought of. And I think this has good possibilities as far as trying different sauces. The pad thai idea is good. I might try a curry too.0
