OMG, you ARE my people. I'm SOOO happy I found you. I love to cook, have been avoiding it for quite a while because when I cook I eat my own goodies with too much gusto, in too much volume. But I am determined that I will relearn to cook. I want to cook using more flavor, fewer fats, and much smaller portions.

I have been really enjoying my slow cooker chicken for lunches for last the week or so. On the weekend I put about 6 good sized chicken breasts on the slow cooker, top with a can of 'rotel' type tomatoes (undrained), some corn (either frozen or canned drained), and a can of black beans. Season with salt, pepper, chili powder. Cook on high for 6 hours. Stir up to shred the chicken and distribute everything. I spoon some into a container every morning, maybe some extra salsa, and a tortilla on the side. It's been doing a pretty good job of hitting the spot.

hum okay. So my weight hasn't change this week.
My foot still hurts like hell so I'm really trying to cut back on my portions since I cannot go walking or running.
I'm cooking this right now, kinda mexican soup.

But I made it simpler: used a can of chopped tomatoes instead of fresh tomatoes,no corn tortillas, no chickpeas or green beans.

Hello all! I didn't weigh in this week because I was camping and lord knows I need to rehydrate and kick butt with those two extreme cheat days. Tonight for dinner I am making stuffed peppers. I browned some ground beef. Cut up an onion, green pepper, fresh basil, garlic and bay leaves. Poured in a can of tomato sauce, some uncooked arborio rice and worcestershire sauce. Simmered it all for about 45 minutes and seasoned with salt and pepper. Stuffed the green peppers and topped with mozzarella. Broiled to bubbly. Yum!0

Today I weighed in at 179.6! I have not been this small since elementary school. I even had a doctor tell me when I was 14/15 that I would never get below 180 because I was big boned. HAHAHAHAHAHAHA! In your face!
Anyways.....I will be making my husband lasagna for his birthday tomorrow. Today I will make the ragu bolognese and bechamel sauce. Along with the biga for the ciabatta. Tomorrow I will make the lasagna noodles and garlic aioli. I haven't made lasagna in over a year. It is going to be delicious!0 -

I ate lasagna too a few days ago. I needed some comfort food I know it's full of cals but it's healthy so I don't mind once in awhile...My boyfriend and I made homemade bolognese sauce it was delicious!0 -

Hermolis Chicken Chasseur question
It is true this is a kosher frozen meal - but Kosher or not does not affect my choice. The box says it has 144 calories THATS why I chose it.
It was very disappointing - very fatty, thin stock, one skinny mushroom slice.
I absolutely CANNOT BELIEVE that such a fatty thing is only 144 calories. How does anyone check (or is that impossible?)0 -
Food has been so bad to me this week in that it has been so good. Ate out a lot and had several drinks. I have not cooked myself much and that is a crutch. I can really be accountable for myself when I am doing the cooking but tend to splurge when I am not.

Anyone like seaweed salad? Found this recipe yesterday and made it with a few adjustments. So frickin' delicious and really low in calories. Plus, seaweed is really good for you!

You have just inspired me to find an Asian food store in my new neighborhood. I love seaweed salad, but always feel a little uneasy eating that stuff from the fish counter at the supermarket, due to its fluorescent green color. I looked at your recipe link - that stuff is fluorescent too. Was your homemade stuff that color green???0

never ate seaweeds salad. Big drama in my life: I don't like seafood.Well, except fishsticks with ketchup! LOL! But I really love Sushis ( I eat veggie-sushis!) I don't like NORI (the sheet of seaweed when it's "outside" the roll, I like when the rice is outside and the nori inside.
I don't know if seaweeds taste exactly like NORI but nori doesn't really taste like fish or the sea, in fact it's a bit sweet.
Sorry foodies haven't been there for a week:brokenheart: I started work again (in a school) and I basically did 12 hours/day. But today normal schedule is starting so I'm gonna have time to participate again!0 -

Mine was not florescent. It was a dark green and much wider bits of seaweed. I have been making this recipe daily since finding it. I tend to eat something I like for a long time and then burnout hard. But it's so delicious! The seaweed is really high in sodium but I am not too concerned with that because I drink copious amounts of water each day, between 160 to 240 ounces.
Since I weigh everything this is the recipe I have concocted:
wakame 20g
rice vinegar 11g
braggs amino 11g
organic cane sugar 4g
organic toasted sesame oil 3g
red pepper flakes >1g
Mix all except wakame in small bowl. In medium bowl soak wakame in very cold water for 10-15 minutes. Drain and squeeze out excess water. Toss together wakame with rest of the ingredients. makes 1 serving. 48 calories.0 -
So I have decided to not weigh myself again until the 30th of September. My last weigh-in was on the 4th. I have been a slave to the scale and it makes it hard to focus on just being healthy when all I can think about are those damn numbers. My goal is to be 176 by the end of September. I know I can lose 4 pounds this month. And I know all of you can meet your goals too!0

Today is such a gorgeous day in Seattle. So in celebration of our one day of summer, ;D , I made a brine for a chicken I flattened and will be grilling whole. The brine consists of water, kosher salt, preserved lemons, bay leaves, thyme, honey and black peppercorns. I also made a potato salad with red potatoes, duck eggs, homemade pickles and a mayo/dijon sauce. With steamed brussel sprouts on the side, this will be a wonderful meal.0

I like the idea of brining a flattened chicken. Flattening + lots of lemons -- that's my standard 'goto' for a quick chicken dinner. Hubby says he's tired of it. Let's see if I can get it past him this time.
Of course, I could just cover the chicken with lingonberry jam. That's what he did 2 nights ago when he cooked the salmon!!!! I didn't eat any, and refrained from commenting on it. All I could think was it was a change from his usual pesto covering. And that I didn't have to cook him dinner when he arrived home late. Late dinners are one of my weight problems. If I cook for him when he comes home late, I often end up eating a second dinner.0 -
