Did this yesterday and it was delicious, I think we either didn't cook the crust long enough or just not cook the cauliflower before baking the crust because it was slightly mushy. But it was still delicious, my husbands only complaint was that I made it a veggie pizza and he likes his veggies cooked to death.....all he ate was the crust! lol0

I tried this Friday with a few changes and OMG it was AWESOME! It's especially a good find for me as I need to be gluten free. I was worried about the calories, but when I doubled the recipe, and did it in 6 slices it was only 185 calories a slice. My husband really liked it too, so overall this is a total WIN!!!!!

I was JUST looking for this recipe today and did not like the Google results. I'm trying to lose weight and my boyfriend just got told he's pre-diabetic so he needs to drop some pounds and watch his carbs. The catch, he's allergic to green veggies.0

I made this yesterday following the recipe at http://www.eat-drink-smile.com/2011/04/cauliflower-crust-pizza.html
It was great, but a little high calorie-wise, due to the cheese. What I did experiment with is using a pizza stone. I made the crust on parchment and put it on a pre-heated pizza stone t in a 600F oven. This makes the crust much more cohesive - it behaved like pizza!
Today I am going to try less cheese, and use FF mozzarella. I'll report the results!0 -

For the crust I used 1.5 cups of cauliflower plus 1/2 cup of FF mozzarella (plus the same spices). I topped it with another 1/2 cup FF mozzarella. and turkey pepperoni, onions, green peppers.
Totaled out at 296 calories for the entire pizza, but I only ate 4 (of the 6) pieces.
The crust was fine - help together very well - I think a very hot pizza stone is the magic!
