struggle meal?
Probably a pan seared, panko-crusted veal chop with sorrel cream paired with a bottle of Arrowood, Sonoma Valley, Malbec 2007.
either that, or ramen noodles eaten over the sink.

Idk man these meals just seem like my every day regular life meals??? Well, if I ate at home. My struggle meals are the dollar menu.2

- Onion rings and chili dogs from DQ
- Mac n' cheese with hot dogs
- A sleeve of Ritz crackers
- Cinnamon Toast Crunch or some kid cereal with a ton of marshmallows in it
- Sushi (my favorite place is a five minute drive from home)
- Quesadilla with beans and cheese (and hot sauce, of course)
- Grilled cheese sandwich and canned soup

The already-grilled-and-cut-up chicken packages at costco. They’re quick to heat up and go perfectly with the chick-fil-a sauce i’ve been hoarding
Those mexican bowls (also from costco, don’t know the name) that heat up in 5 min and go fantastic with guac and tortilla chips
Instant pot roasts- throw it in frozen and have a perfect roast a couple hours later, throw potatoes in for the last 10 minutes if you fancy
Instant pot rice with butter, ground beef, garlic, and gf cr of mushroom soup- ultimate comfort food
Orange chicken (also costco)
Super quick breakfast: cook brown rice farina (cooks in about three minutes) then add chopped walnuts and apple chunks. Drizzle with maple syrup, oh my GOSH it is heavenly
Fried egg sandwiches. Toast bread, fry egg, stick pieces together with miracle whip or mayo.
Tuna and multi-seed crackers from... yes
Ready made Pacific tomato & red pepper soup (YES COSTCO)
Green grapes in vanilla Activia yogurt. Just try it. It’s to die for
French toast, hash browns, and bacon
Wait. I just realized all i do is struggle meals3 -
Rice and eggs is my typical low-cost meal. With a little oil, onion and broth powder - all quite cheap - it's actually a pretty tasty meal.
And just to be controversial, sweet stuff is dessert for me, not a meal. Savory all the way.2 -

Indeed. Totally gloss over the fact that I snuck sushi into that list.4 -
I happen to enjoy the "struggle foods". Literally can live on rice and beans forever If needed to.3

My husband and son both prefer it. They get a bit fancy buying the Shin Red and Shin Black varieties as well as some of the more unique flavors of ramen packets.
But yeah, kinda got tired of it from my college days.2 -

When I was a kid my mom sent me to Food Circus with a crumpled $2 dollar bill and lint covered change to procure ingredients for dinner and told me to "make it work"

When I was a kid, I could walk into a convenience store with just a five dollar bill and walk out with a six pack of beer, a fist full of candy bars, a bag a pretzels and several snack cakes.
Now, they have cameras everywhere.

When I was a kid and we were really poor my favorite struggle meal was chili-mac: boxed mac n cheese mixed with a can of chili.
Or sometimes my mom would bring home airplane meals when she cooked for a company that catered for the airlines. They were terrible but I loved them. So many weird preservatives.
For a special treat, step-dad C made fried baloney sandwiches with government cheese. The baloney was sliced fresh off a giant loaf hunted down at the poor store.
Canned tuna and cream of mushroom soup with peas over rice was pretty dang good, too.5 -
Porridge. Can be made with water or milk. Excellent on cold mornings x3

Wait, we did this, too. The giant hunk of baloney loaf was a thing my granddad always did and my dad adopted and adhered to. Fried baloney sandwiches are delicious, alternately, being a latchkey kid, my cousin and I would take the pre-sliced baloney my grandma always bought, put cheese in the center and then microwave it for a few seconds to make a "baloney bowl". Sounds gross, but was actually warm and delicious.

I may have misunderstood what you meant by struggle meals. I thought you meant quick/lazy/comfort food because stress
My favorite cheap meals are black beans and rice, oatmeal, grilled cheese sammies with tomato soup, and mac n cheese
None of which i buy at costco 😌2 -
