Hubby cooked tonight. Dutch andijvie stampot (=mash with curly endive) and grilled smoked sausage with dijon mustard and tomato salad.

Grilled beef patty, fried potatoes w/shallots & spices, Asian slaw.

What are some favorite "go-to" meals?? I am trying to broaden my home menu. ๐คฃ

My go to meal is Cambodian beef lok lak. My techniquw is a little different from this recipe in that I douse the sliced beef in cornstarch just before cooking. Shake the beef through cornstarch in a sealed food container or reuse a plastic bag. Arrange the salad on the plates. Make the stir fry sauce and tne dipping sauce. Fry the beef with the garlic until beef loses raw colour or garlic starts to colour. Toss in the stir fry sauce and continue to stir fry for maybe a minute until the cornstarch coating thickens the sauce. Serve with optional rice or sunny side up egg.
Coating the meat in cornstarch helps it keep more tender, but you do need to use a good non stick pan, or a well season carbon steel wok or cast iron frying pan, as it otherwise wants to stick badly.

Lunch today - the last of a batch of Sweet Potato Tortillas from the freezer with salsa and salad veg plus a healthy dash of Franks Jalapeรฑo Sauce. ๐ฅต

Hubby took care of dinner. Side of green salad and vinaigrette we keep in a squeezy bottle in the fridge. Main of beef estouffade aux olives pulled out of the freezer from when I made a big batch a few weekends ago. Dutch andijvie stampot as a starchy side.

Fig and Goatโs Cheese with Red Onion, Honey & Walnut and Salad. The Figs were riper this time! ๐ Heaven for less than 400 calories!

Poached flounder, basmati brown rice w/rice seasoning and salad of romaine, olives, avocado, tomato & celery dressed w/sesame oil, ponzu and white miso. I didn't decide to do that dressing until I had chopped all the vegetables so the olives were a bit odd here. I added the rest of the "dressing" to the fish.

Yellow rice, no salt added black beans and small bits of mango....yummy!4 -
Classic caesar followed by chicken tacos. First attempt at making corn tortillas not a total success because they weren't very thin or pliable enough. Needs practice or resorting to store bought. We used store bought salsa (it had been lying around the pantry for almost a year) and guac (no ripe avocados to be found).

Spinach Crepes from the freezer, filled with mushrooms, spinach & goatโs cheese, topped with a smoky tomato sauce and vegan applewood smoked cheese.

Salad of romaine, celery, tomato, avocado & shredded chicken thighs seasoned w/a mix of Mexican oregano, cumin, coriander, smoked paprika, chile powder, garlic salt & black pepper. Dressed w/olive oil.

Tacos again. This time with store bought flour tortillas, the leftover store bought salsa, pineapple/red onion/mint/lime salsa, chicken, prawns, feta, caribbean hot sauce, avocado, mint and coriander.

Easy leftovers tonight.. chopped up a steak strip and added it to a salad.. but had to add some hot sauce just to spice things up a bit!๐

Salad of grilled baby gem, ranch and salmon mi cuit pulled out of the freezer. Secondi of linguine with pesto where the pesto I made a couple of weekends ago and froze in silicon muffin tins was also pulled out of the freezer.

My favorite local place for take-out. Garden of Eaten. Mediterainian lemon chicken salad with sundried tomato vinegrette, artichokes, hierloom tomatoes, onions and feta cheese. Yum.5 -
Half a small pork loin seared on cast iron then finished off in the oven, 1/2 cup cooked brown rice seasoned with garlic, lemon peel, and pandan leaf, and roasted eggplant, portobello, & shishito peppers.
This looks like a lot, but #1 it's a deceptively small bowl and #2 I tend to eat smaller meals for lunch or breakfast (if I even eat breakfast most days), and prefer to save my calories for a bigger, satisfying dinner.

Late dinner of a new to me dish - a Japanese Okonomiyaki which I prepped earlier knowing Iโd be out on a Hot Air Balloon flight. Wasnโt really hungry when I got home - still buzzing from the experience- but it was delicious! Definitely a โdo againโ recipe. ๐

I may truly be addicted to this sunflower crunch salad mix.. so yummy! Added diced ham and tossed some shredded cheese on top ... and dinner is served!
