We got a ton of Thai takeout yesterday from a new restaurant but I never took any photos. Tonight I had leftovers of larb salad and green papaya salad. I added some cherry tomatoes to the latter. For desert we had mango and sticky rice which we were too full to eat yesterday.

•Liver with sautéed cherry tomatoes, onions & peppers
•chicken mini cutlets with a almond flour/herb crust (more cherry tomatoes..)
•Açaí-blueberry-kale-flax/hemp milk smoothie

Tacos. Poached chicken, sliced avocado, crumbled feta, grated mild cheddar, tomato salsa, refried kidney beans. grilled corn, lime, herbs and homemade corn tortillas.

A trick I use for rolling out thin flatbreads such as the corn tortillas I did tonight.
After resting the dough (masa harina corn flour for tortilla needs a good rest for the flour to absorb the water) roll into small golf balls approximately 30g each. Lay balls between 2 sheets of silicon sheets, baking paper, waxed paper or heavy plastic from cutting apart a large ziplock bag.
Sandwich each dough ball between your nonstick wrap, and then between two unwarped cutting boards. Place on the floor and stand on the cutting boards. Peel off the nonstick wrap and pop your flatbread into a dry hot skillet.5 -

Hubby made dutch zuurkool stampot (=sauerkraut mashed with potato) and air fried rookworst (=smoked sausage) with some green salad on the side.

Having made a Coronation Chicken filling for a Baked Potato fir my husband last week which he really enjoyed I decided to adapt the recipe for myself this week. So here is Coronation Butter Beans in a Baked Sweet Potato. It was very good and will become a regular on my dinner menu. 😊

Breaded air fried chicken thighs, coleslaw, Korean courgette namul, mac and cheese.

My garden tomatoes are finally ripe enough that I can use them in my cooking.🍅
I made tomato soup!😋 I air fried some tortillas to make chips, I added some feta, cilantro and sriracha to the soup and had a garden salad with raspberry dressing. It was so good and light! Only 376 calories.

Homemade squid ink pasta with sautéed scallops, grape tomatoes, red pepper, olio and herbs..

Mezze dips (hummous, mutabal, mohamara) and fatoush salad. Pita bread arrived to the table later, and not pictured.

Figs, Red Onion and Taleggio Salad. I usually use a soft goat’s cheese for this but had some Taleggio on hand so tried that instead. It was fine but nowhere near as good as the goat’s cheese usually is. 😢

Pan fried haddock smeared with gremolata served on a tin of butter beans warmed up in bisque we had in the freezer. Smashed cucumber salad on the side.

Seafood boil from the Caribbean takeaway. Unfortunately the hubby tossed out the shells I was planning to make bisque with. I normally brown the shells in the air fryer until fragrant and then boil the shells for an hour or two and freeze the bisque for warming up a tin of beans in to serve under pan seared fish fillets, like the meal we had last night.

Made a big batch of Soya Mince, Green Lentil & 3 Bean Chilli today. With brown rice and a small serving of Beetroot Tortilla Chips.

Chickpea Curry (from the freezer) on a bed of steamed Cauliflower Florets with a Tomato & Onion Salad.

Stir fry of beef & snow peas over rice. Fresh cucumber and daikon kimchi using only salt, sugar and gochugaru.

Char sieuw pork tenderloin cooked sous vide and seared in the air fryer. Stir fried choi sum. Rice.
