Saturday lunch: leftover chicken with veggie rotini pasta Alfredo and broccoli and a sprinkle of parmesan cheese

Cooking at home. Thai green curry chicken and stir fried choi sam with rice.

Supper and dessert tonight:
Honey chicken stir-fry and jasmine rice
Homemade vanilla ice cream with strawberries, two homemade vanilla bean shortbread cookies, and a square of dark chocolate.

This morning's lovely quiet breakfast. Savory oatmeal made with beef bone broth, egg whites, spinach and mushrooms. Added gojuchang paste for a bit of kick .

Sunday morning: It's definitely an oatmeal kind of day - chilly and rainy. Old fashioned oats with local blueberries, a few strawberries from my garden and a drizzle of pure maple syrup
6 -
Sunday late lunch: two egg broccoli cheese omelet

Sinus infection means spicy ramen. Poached an egg in the broth too.5 -
Sunday dinner: small plate meal (dinner on a salad plate) - chicken tender over 1/3 cup rice with a drizzle of pan sauce (shallots, minced garlic, chicken stock, cream, thyme), side of peas and a sourdough dinner roll

Supper and dessert were spectacular tonight!
Zaru (Cold) soba (topped with nori and green onions, soup base on bottom with wasabi pre-added), with tuna
Homemade vanilla ice cream over a quartered nectarine
I love zaru soba. This was a nontraditional way to serve it, but it tastes just as great!4 -
Shake and bake drumsticks, fried potatoes/onions and corn on the cob. I used gluten free flour and Trader Joe's Ajika Georgian seasoning blend for the chicken. It gave them an odd color but the flavor wasn't as strong as when I use curry powder or other seasoning mixes.

Ajo blanco followed by toasted quinoa salad and air fried chicken drumsticks with toum.
4 -
Lambwurst sausage and mashed onion/potatoes. Sausage came from the butcher shop and was one of their better ones. They have a tendency to over salt but these were perfect.

Hake crusted with blitzed black olives, capers, garlic, parsley, and olive oil mixed with breadcrumbs and air fried. Sweet potatoes were put in earlier in the air fryer, and finished underneath the fish for the last 10 minutes. Sauteed spinach made on the stove after the fish went in. This is a 25 minute weeknight meal.

Reuben salad. When I googled what to do with leftover salt beef I stumbled upon a blog suggesting to turn classic sandwich combinations into a salad. This was romaine, salt beef, sliced pickle, hard boiled egg, brown bread croutons and ranch. If you were being pedantic it should have been rye bread croutons and thousand island dressing. Second course of linguine with brown butter, mushrooms and sage.

Thursday dinner: NY Strip Steak with sautéed onions, baked potato and corn... vanilla ice cream and strawberries from my garden for dessert

We went to a basic Vietnamese cafe around the corner. I had bun cha with grilled pork.

Chicken corn chowder out of a can. Still sick5 -
Vietnamese garlic noodles is an unlikely recipe containing Vietnamese fish sauce, butter, sugar and parmesan.

Soft scrambled cheesy eggs, celery w seasoned salt, strawberries4 -
We had some mung bean sprouts and asian aubergine that needed using up. Pork loin hor fun because the traditional beef could not be found in any of our nearby supermarkets. Chinese steamed aubergine salad with shallot oil dressing on the side.

Still sick. Had some ramen and a snack plate: carrots, turkey pepperoni, cheddar cheese, green apple. Dr appt tomorrow so hopefully I can get over this sinus infection4 -

I'm assuming shallots, oil, salt, pepper, vinegar?

Below is the recipe is use for the aubergine salad, but I deviate a little on making the dressing. On the veg, I sprinkle on some soy, sweetish vinegar, and pressed garlic. Chop some green onion or chive very fine and eventually a little garlic, then heat up about a tablespoon of neutral vegetable oil until it is smoking hot. You can start to smell the oil smoking. Turn off the heat, stir in the chopped shallots, followed by the chopped garlic and pour immediately over the salad.
This is a Chinese technique also used for steamed (or microwaved) fish. The traditional technique would pile chopped green onion and ginger onto the fish, followed by soy, lemon, sugar. Then a few tablespoons of very hot vegetable oil is poured over the aromats to contact fry and blend the flavours.

A girlfriend of mine swam the English channel today and is coming over for dinner tomorrow. We had a 1.5 kg "special occasion" steak in the freezer which I pulled out. it is a Txuleton style rib eye of 12 year old retired dairy cow that looks very well marbled.

Lunch at work: Mac and cheese (super runny, not very good), key lime pie, California roll and a mountain of ginger.3 -
So my girlfriend who swam across the English Channel on Sunday came to dinner tonight. She couldn't eat that much because she was developing mouth and tongue ulcers from exposure to salt water. She was a little heavier than I am used to seeing her because she needed to gain weight for completing the Channel crossing. She coldn't gain weight by eating fattier meats (she lives in Hong Kong where that kind of food is readily available) because pork belly etc makes her too full but managed to gain the required weight by eating more carbs. That's telling.
Txuleton steak, roast potato, salad. Sauces were toum, zhoug, and hollandaise.

Not as fancy as the above, but here's tonight's dinner and dessert. Dinner was a small pork chop, green beans, and a couple small potatoes topped with bits of Beehive red butte hatch cheese. I highly recommend this cheese.
Dessert was a split banana, several split strawberries, and homemade vanilla bean ice cream.
