A cold dinner designed to use up leftovers. We had some leftover roast pork loin and corned beef which was sliced thin and served cold with some cheese. Starch and veg were tomato and pea bruschetta.

Lemon-tahini coucous with turkey and vegetables topped with sliced almonds, lemon zest and feta. This was a modification of a chicken recipe from eatingwell.com. I used some already cooked ground turkey from the freezer. The recipe put all ingredients together but I preferred the meat, coucous and vegetables separated bowl style. Vegetables were mushrooms, cabbage/carrot mix and baby spinach.
Replacing the turkey with garbanzo beans would make a pretty decent vegetarian meal.

I'm in love with my cast iron skillet! Tonight I made chicken with just-picked beans, onions and cherry tomatoes from my garden along with mushrooms. So good! And yes, I devoured the whole thing.

Copycat KFC drumsticks from the Chicago Tribune recipe, kohlrabi slaw with ranch, sauteed spinach, baked potato.

Fish tacos, air fried green tomatoes and black beans. I air fried the fish (flounder) and tomatoes by coating in gluten free flour, dipping in beaten egg and coating in a mixture of panko, corn meal, chipotle chili powder and Mexican oregano. Tortillas were from the freezer (previously purchased from the local tortilla factory). Taco fixings: avocado, tomato, cabbage, radish, cheese, cilantro and salsa.
I love fried green tomatoes and order them whenever I see them on a restaurant menu but I've never made them before since up until this week I'd never seen green tomatoes for sale. They tasted just like what I've had in restaurants so I was pleased but these were a bit healthier since they weren't fried in oil.

Didn't realize until I sat down to eat that my lunch today was "salad with a side of salad".
White beans, orange bell pepper, cherry hot pepper, cucumber, yellow string beans, kimchi, sunflower seeds, sesame oil, and fresh lemon juice, with a side of seaweed salad.

Two slices of sourdough rye bread topped with a lemony basil ricotta, petit pois, runner beans and asparagus. Splodge of the ricotta on top with a sprinkling of garlic and parsley pangrattato. With a big salad.

Ribs, fries and turnip greens. This place has a limited menu and some dishes are served only once a week. Today was rib day which we've been wanting to try. They add bits of turkey and vinegar to the greens. Everything was good.

Second attempt at mince fish stuffed Chinese aubergines and green peppers with black bean sauce. When we were visiting our hometown in Amsterdam we ate it at the restaurant I used to order takeaway from, and decided I need to learn to make this at home, as I don't see it on any menu's in London near me and crave it often. Cooking time for this meal is an hour, but hope to shorten that with practice and figuring out some shortcuts. It's a restaurant dish that is more elaborate than the Chinese home style recipes I normally do.

Casual Friday night dinner: Bacon, Lettuce on an Everything Bagel with a side of strawberries from my garden

Not nearly as fancy as some others, but this is a comfort food meal for me once in a blue moon (it's a calorie bomb when made full-sized to a large plate).
Tater tots covering plate base, topped with steak, bacon pieces, cheddar, tomatoes, jalapenos, bell peppers, plain fat-free Greek yogurt, and Newman's Own ranch (I can be fairly particular when it comes to which ranch dressing I use in some dishes/combinations).
Dessert was a trial of a new homemade ...sorbet? Anyway, not sure if it is one officially, but I'm calling it that. "Orange Dream Sorbet" is the name I've given this. Gotta tweak it slightly next time, but it was a solid first-run. ... no pun originally intended 🤪5 -

Saturday brunch:
2 basted eggs, multigrain toast and 1/2 a fresh peach

Half of this made for a tasty and reasonably light-ish lunch for me. I cut a pocket into a chicken breast and stuffed a pre-cooked mixture of spinach, gouda, minced garlic, and some salt, then wrapped in bacon and baked. The bacon was not quite as crispy as I'd hoped for, but I wasn't sure how to achieve that without drying out the chicken. Either way, it was good.

Dinner party at my place. Dongbei guo bao ruo is traditionally double deep fried but I did the first cook in a dry non stick pan and the second cook in the air fryer. Stir fried bok choi, rice, and warmed up leftover fish minced stuffed aubergines and peppers in black bean sauce from yesterday.
Dessert was a copy of something I once ate at a yakitori restaurant that turned vanilla ice cream into a dish that goes well with an asian meal. Toppings were toasted sesame seeds, diced candied ginger, miso caramel sauce plus dehydrated spiralized sweet potato and a fortune cookie for crunch. The restaurant version I once ate used deep fried sweet potato shards.

Side salad is just spinach and the lite Olive Garden dressing. Chicken drums were cooked in the air fryer and came out fantastically crispy. The rice is just microwave wild rice.

Your sorbet looks lovely. I do not have an ice cream maker and when my fruit sorbets freeze too hard my rescue is to cut into cubes, run through the food processor with a raw egg white, then re-freeze. This seems to aerate the mixture enough to loosen the texture.2 -
Green curry chicken and stir fried bok choi with rice. The hubby finds commercial green curry paste too hot, so I stretched it by blitzing with extra aromatics (a clove of garlic, some coriander stalks, a thumb each of ginger and galangal and two lemongrass stalks) in a mini food processor. I normally keep galangal, ginger, kaffir lime leaves and lemongrass in the freezer.

Monday dinner:
Chicken salad (chicken, celery,
onion, salt, pepper, avocado mayo) on a ciabatta dinner roll and (bigger) side salad of romaine, red leaf and arugula, topped with jicama, radishes, cucumber, peas and marinated mozzarella. I wanted a drizzle of Italian dressing, but I'm out. Had to settle for a little Catalina.

Confit du canard cooked sous vide, dumped in the freezer, and crisped up in the air fryer with roast potatoes, carrots and okra. Gravy made with liquid from the sous vide bag.

Rosemary pistachio crusted chicken with a honey mustard cream sauce over Jasmine rice with a side of baby peas
(The chicken looked better before I sliced it and drizzled the sauce over)
