    Philly cheese salad. 4oz of thinnly sliced strip steak cooked medium, shredded mozzarella cheese (optional peppers & onions) over a bed of iceberg lettuce and spinach with 2T of Italian dressing. It was yummy, filling and calorie friendly. Less than 400 cals with minimal carbs (13) and 25g of protein.

    Mid-day dinner.

    My original plan was to saute' some mushrooms and onions and then use some seafood (squid, scallops, and shrimp) to add to some leftover black bean soup. I saved the soup and instead added more vegetables and served with sprouted brown rice.

    Onions, celery, jalapeno, lots of mushrooms, garlic, and the seafood that I let soak in some coconut aminos and toasted sesame oil for a while. In the pan, I added some nutritional yeast, amontillado sherry, more coconut aminos, Mediterranean oregano, and Maldon salt.

    Could have served two easily if I made more rice. I made quick work since I had skipped my morning oats and yogurt to save room for a big mid-day meal. About 750 calories including rice and the cooking oil.

    Tonight, I had vegan broccoli-cheeze soup with homemade Italian herb bread. Then, for dessert, I had a small piece of devil's food sheet cake with strawberry icing and peppermint tea. It was delicious!

    Tomorrow I'd like to try this old recipe for Baked Bean Soup-

    1 Tbsp bacon fat (I'll probably use olive oil)
    onion
    garlic
    green bell pepper
    cup chopped tomatoes
    2 cups Consommé (beef stock)
    1 can baked beans
    celery
    parsley
    bay leaf
    (all simmered a half hour or so & says to press through a sieve, which i probably won't)
    madeira (tsp to each bowl before serving)
    salt/pepper
    lemon slices for garnish

    Yesterday I was feeling a bit sick/nauseous and didn't have anything prepped, so I ate peanut butter banana toast and some low-calorie muffins with hot tea. Today, I'm a little more prepared (but still feeling under the weather) so I'm making some taco soup in the crockpot.
