    Grill night, kids get burgers, wife and I are having grilled chicken breast with corn on the cob.

    Vegetarian giant soft taco with a Mission Carb Balance tortilla, LiteLife smart ground veggie meat cooked with taco seasoning, topped with reduced fat cheese, sour cream, shredded coleslaw mix, and a bunch of salsa. Delicious!

    Baked chicken, roast potatoes, veg sumptin sumptin - picked up a balsamic vinagrette - may try sheetpan roasted vegs - maybe asparagus, cauliflower & broccoli florets.

    roasted pork tenderloin basted with lemon balsamic, butter lemon marmalade, sharp mustard, and herbs de Provence.

    Wild rice cooked with low sodium chicken broth.

    Spinach, if I can get off my bottom and get to the grocery store. Otherwise simple mixed greens and tomato salad.

    Tonight, I'm going to try a grits version slugburger..half grits, half meat and onions plus a salad and roasted sweet potatoes with thyme and maple.

    slug burger? 😂

    This reminds of a family favorite we had every Halloween.

    Beef stew, mixed with sour cream, baked with drop-biscuit dough dolloped on top.


    I took the leftovers to work, and a coworker said “yuuuuck! that looks like barf!”


    so Barf if was, ever after.

    We used to test the girls boyfriends two ways :

    #1:“we’re having Barf for dinner, won’t you stay?”

    #2: Let’s watch this Mr Bean or Johnny English movie or show and see if he laughs.

    Ironically, the one that stuck hates Barf and thinks Mr Bean is the stupidest, unfunniest thing he’s ever seen. We were worried about that one, but he’s still around after nearly twenty (😱) years.

    chicken marinated in Greek dressing, broiled and chopped, with homemade tzatziki sauce, in a pita bread. And Greek salad left over from last night.


    lunch today is a simple wrap with the leftover roasted pork tenderloin from an earlier entry. I whipped extra sharp German mustard, herbes de Provence, lemon balsamic glaze, and butter lemon marmalade together, put some slashes in the tenderloin, and massaged it in before roasting. It was delicious, and stayed very moist.

    Two yum meals to look forward to!

    Vegan Sweet Potato Chickpea Curry

    Ingredients

    • 3 tablespoons olive oil
    • 1 onion, chopped
    • 2 cloves garlic, minced
    • 2 teaspoons minced fresh ginger root
    • 1 (15 ounce) can chickpeas, drained
    • 1 (14.5 ounce) can diced tomatoes
    • 1 (14 ounce) can coconut milk
    • 1 sweet potato, cubed
    • 1 tablespoon garam masala
    • 1 teaspoon ground cumin
    • 1 teaspoon ground turmeric
    • ½ teaspoon salt
    • ¼ teaspoon red chile flakes
    • 1 cup baby spinach

    This is the easiest recipe and so good! And cheap (once you buy all the spices…)I don't like to add the spinach in it, though..I add a supergreen salad on the side and a roll or cornbread

    An Asian frozen meal stirfry package with 400 cals, veg, rice & chicken - it has high 1060mg sodium so will add 4c mixed non-starchy veg, a cup of torn roast chicken and 2 eggs for a meal for 2 with leftovers. Will serve with lime & mandarine orange wedges.

    Sautéed cod, miso glazed carrots (private selection, pretty good), and Bob Evans mashed potatoes, single serve. It was good, and easy!
