    Simple dinner. Turkish salad and cappelletti pulled out of the freezer with vodka sauce.

    "Old and new" … last of the "Bombay-esque" mash from the other day's post, and the last of those peas incorporated into a new salad (farmer's market had some really good, late season, field ripened tomatoes and yellow tomatoes), new batch of chicken (different rub). A surprisingly harmonious blend of flavors.

    A girlfriend came over for dinner. Beef rendang cooked sous vide with brown rice, air fried turkish peppers, sauteed spinach and quick pickled carrots. English summer pudding and store bought custard for dessert.

    Cheat's soupe au pistou followed by sous vide pork loin, pickles and warmed up leftover ride. The pork was brown in the air fryer before slicing.

    Sunday dinner chicken and vegetables pan bake. A bit of a simple, fridge-clearing exercise during a busy day. Veg mix includes red and yellow tomatoes, red and green bell peppers, red onion, a lone shallot, blue potatoes, minced garlic, EVOO. I used an Italian herb blend for flavoring. Chicken has a lemon pepper, paprika seasoning. Meal items were chosen to mainly use up over-bought, rapidly aging field-ripened tomatoes I got earlier in the week; roasted, they picked up a deeper, richer flavor. The garlic head on the edge of the pan was a failed experiment; I was hoping for a roast garlic "paste" to result to enhance the chicken, but forgot to give it a little oil so all I got was dried cloves. Anyway, lots of colors and taste.

    @yakkystuff Thanks. I started doing that during the pandemic when fresh were hard to get but boxed flakes were. It was an old Boy Scout camp meal technique from the 60s (or earlier).

    Relatively quick weeknight meal when I got home from work at 21:00. Green salad and cheese soufflé. I sent the hubby instructions to separate eggs, grate cheese and grease the ramekins before I got home making this doable on a work night.

    Tonight I went to my batch cooking buddy's place where we quadrupled Marcella Hazan's recipe for bolognese sauce. While the sauce was simmering (recipe calls for 3 hours but let it go for 1) we made 60 tortellini using gyoza wrappers filled with leftover beef stew blitzed in the food processor with a few slices of pastrami and an egg. We ate a few of those as a starter and froze the rest. So a two course dinner tonight both consisted of pasta.

    This is a very light healthy dinner. Vietnamese cahn soup made with spinach and crab sticks with roll your own summer rolls filled with lettuce, perilla leaf, mung bean vermicelli+grated carrot, and pork tenderloin. Quick to put together on a weeknight if you already have the nuoc cham dipping sauce in the fridge and sous vide pork tenderloin in the freezer.

    Very odd combo dinner of carbonara-esque pasta dish and some blanched bok choy w soy sauce/oyster sauce/peppericini brine topped with sesame seeds.

    Here's another geographically confused pasta dinner. Spaghetti aglio olio accompanied by Turkish salad (watermelon/feta/mint/pomegranate molasses).

    Struggling with my batch of weekend half brown focaccia. I replaced my air fryer with a new model chosen more for looks than performance. Xiaomi brand looks like it was designed by the Apple iPhone team. Last weekend the bread was doughy in the middle. Tried baking for longer, and flipping the loaf to brown the bottom, which was better, if crustier than normal. Any advice from experienced bread makers appreciated. I am using the highest available temperature which I suspect is lower than my old Ninja.

    It's been a tough couple of weeks … first, my wife contracted covid, and I tended to her, then I got the bug, she recovered and now I seem to be over the hump, although I am waiting on tomorrow's test to see if I'm negative now before going out and about. Consequentially, cooking hasn't been all that elaborate. My symptoms were mostly bad headache and real tiredness, with some congestion, and a lot less severe than hers - she was flat out for several days. Now I am just mostly tired. Here's Saturday's fairly simple dinner, burger with brown rice and mixed veg. Let's see how the week progresses.
