  • I just made this and it is so good. My next snack I'm going crumble up a half of a gram craker to give it a little crunch. Mmmm So good!

    i received this recipe from the school i work at. because the kids make this in class, and to reduce on mess.... this recipe is mixed up in a zip-lock bag.
    throw all the ingred's into bag, "mush" it up....if you are placing the mix into a graham cracker pie crust, snip the end of the bag and squeeze into the pie crust.

    my 7 year old loves making "pumpkin pie" all by himself....and there is little to no mess... :)

    If I used "light" cool whip and sugr free instant pudding- would it be ok for my Dad who is diabetic?

    I see this recipe with mini graham pie crusts for portion control in my near future. Thanks for sharing. I wonder if I got cheesecake flavored pudding would it resemble pumpkin cheesecake? Hmmmmm..........lol

  • Yes using the SF cool whip works well. I usually the FF Cool Whip and always the FF, sugar free jello pudding mix. Some recipes call for butterscotch but my favorite is the cheese cake flavor.

    I made little tarts out of this recipe.

    I made the pumpkin whip. I then took wonton wrappers, spritzed them with water, sprinkled cinnamon and stevia on them, baked the wonton wrappers in muffin tins at 350 degrees for 8 min. Let them cool, then added one tablespoon of the pumpkin whip to the wonton cup, added a dollop of whipped cream, and VIOLA!! They were really good!! I believe the calorie intake was about 73 cals total for one tart.

    It is sooooo delicious!! - I used 'light' cool whip (great value brand), Jello brand sugar free low calorie vanilla pudding mix & Libby pure pumpkin & the pumpkin spice of course. I added up everything & the total is 410 calories for the WHOLE BOWL. The whole bowl has 3 cups, so if you have 1/2 cup per serving it"d be 68.33 calories per serving. Not too dang bad & it's so dang good!!!

    I'm reporting back after making this to say this recipe is AMAZING!!!! It was so delicious!!! I honestly couldn't believe the party going on in my mouth as I consumed the entire batch in two days. YUM YUM YUMMM!!!! I'm making it again today! Thanks so much for posting this recipe :flowerforyou:
