Shirataki Noodle Beef Lo Mein

Shirataki Noodle Beef Lo Mein
I made dinner for some family members that are visiting— and they've raved about it continuously for the past hour and are staking claims to the leftovers.
It’s actually starting to get embarrassing!
I stir fried shirataki spaghetti noodles, bok choy, green onions, broccoli, bean sprouts, mushrooms, London broil and scrambled eggs with a sauce consisting of soy sauce, teriyaki sauce, oyster oil, sesame garlic sauce, garlic powder and basil.
The entire huge batch, which easily serves 6 (and included 4 lbs of shirataki noodles and 2 lbs of London Broil) contained 2500 calories.
Everyone ate until they couldn’t move and, based on the amount left over, each person ate less than 500 calories.
Here are the comments I keep hearing:
“Even if that was HIGH calorie food I’d want to eat it all the time!”
“You need to show me how to make this. I’ll be making it a lot.”
“I can’t believe how delicious this is. How is it possible for it to be low calorie?”
“Don’t put the leftovers in the ‘fridge. I’ll be eating them as soon as I have room.”
“Can you make this again tomorrow?”
I don’t know if I’ve EVER had a meal raved about as much as this one.

If you decide to make this, yourself, you should know that I prepared it using the “two frying pan” method.
Preparation:
I sprayed a large non-stick pan with cooking spray and dry-fried the shirataki noodles on HIGH while I started frying the other ingredients, one by one, in the other pan.
In both pans I used only cooking spray and/or a little bit of water. No fat was added.
In the second pan I browned the mushrooms and then added them to the shirataki noodles.
I resprayed the second pan and cooked the green onions before adding them to the shirataki noodles, as well.
Once the shirataki noodles were cooked to my satisfaction (sufficiently dry) I turned the jet down to medium while I continued to cook the rest of the ingredients in the second pan in the following order: bok choy, bean sprouts, broccoli, scrambled eggs, London broil slices, sauce mixture— and added each ingredient to the shirataki noodles as it was finished.
The sauce mixture tasted fabulous.
You should definitely give this one a try...!

I've looked at kelp noodles (I'm a seaweed lover) but the ones I've found seemed kind of high in calories. Are there any that are low in calories? I love being able to eat a pound of shirataki noodles that have ZERO calories or a pound of tofu-shirataki noodles that have 80 calories, so I've gotten spoiled.
If you know of any low calorie kelp noodles, please share-- I've LOVE to add those to my diet!

That's weird, the only kelp noodles I know of are sea tangle brand (at whole foods and organic stores), and they are only 6 cals/serving compared to tofu shirataki at 20 cals, I didn't know shirataki were 0 cals

I'd love to see your recipes with them because they seem to have a heartier texture - you just soak them for 30 minutes to soften and they are ready to use. I've been making spaghetti and stir fry but I think I'll go back to shirataki just to make your london broil!0 -
I've been curious about Shirataki noodles for a while. I tried spaghetti squash a few weeks back and I thought that tasted terrible. I'm hoping Shirataki actually tastes like pasta? Thanks for the recipes! )0

bump for later. I have a couple of bags of shirataki not knowing what to do with them. The only way my hubby liked them was when I made as a tuna artichoke pasta. Now I cant have tuna often so they're just sitting on the fridge. We noticed that they are not very good tasting with Italian recipes so I imagined it would probably be better with an asian recipe. This sounds good. Will try soon.0
