A few AWESOME, tried and true recipes from my vegetarian arsenal with seasonal veggies:

Here's my favorite quick assemble dinner:
I start with spraying a pan with cooking spray, and then crumble up 3 Ritz crackers in a little pile. In top of it, I put 1 cup Perdue Short Cuts chicken (it's pre-cooked), then I thaw a Green Giant broccoli w/ cheese sauce single serving in the microwave, then pour it on top of my chicken. Finish it off with 2 more crackers crumbled on top. I bake it for about 5-10 minutes at 300deg, just enough to toast the crackers and let all the flavors mix together. 300 cal, 10g fat 19g carbs, 35g protien.
That's my dinner tonight. Yum!0 -
I'm planning to sautee some mushrooms, broccoli, and chicken breast in Colavita olive oil. Then also have some toast. Later in the night I'll have some mixed berries and a carrot for a snack0

Not sure yet about tonight, but last night was Baked Tilapia with Garlic and Butter, Long Grain Brown & Wild Rice with Whole Green Beans.0

Talapia fillet with balsamic sauteed peppers and onions with broccoli and rice. Made it last week and my wife said save that recipe. Yum yum.
Saute onions and peppers until golden add balsamic vinegar and saute for 3-4 minutes. Rub a small amount of olive oil on the fillets and place in a shallow baking dish. Top with balsamic vinegar veggies and bake until fish flakes.0 -
Mushroom Stroganoff!!! it's one of my boyfriend's faves. I usually have a small plate & a salad with it. I try to use all the reduced fat ingredients I can. Aside from the pasta it's pretty healthy but I am not scared of carbs!0

I think we are having meatloaf with mashed potatoes and green beans, for the entire meal it's around 500 cals so not too bad0

Soup with sausages, potato, carrot, rutabaga, sweet pepper and green beans (and some tomato, onion, celery, garlic and leek for taste). For drink a big glass of lactose free milk. Home cooked food is the best.0

tonight seems to be a turkey taco kinda night. Then I will make me a pizza to take to the pizza birthday party tomorrow so I wont feel so left out because I cannot eat gluten.Right now, I think In will go back to bed.0

Don't know yet since DH is planning it for tonight. Tomorrow we are having Peruvian Roasted Chicken (check out skinnytaste.com) with a avocado salad and beans.0

I'm going to take boneless, skinless chicken breast, cut into bite size pieces, sautee in a pan with about 1 TBSP olive oil and 1 tsp minced garlic, then I'm going to cut up asparagus into bite size pieces as well and toss that in when the chicken is almost done. The asparagus turns bright green and stays al dente and the taste is pretty phenomenal! Obviously you could season to taste.... Not sure what I want to pair with it but that's the main part! (maybe a fresh fruit medly...)0

I have some beans soaking to make refired beans (I do a healthy version) to make toastadas. I made my own salsa and use a nice low fat cheese. I have a whole wheat pumpkin bread for dessert maybe with some cream cheese... I don't know yet.
Not sure what I want for lunch..... maybe some soup.0 -

Friday is either home made pizza night or leftovers night in our house. So we'll either have leftover turkey shepherd's pie or homemade pizza made with pillsbury pizza crust and lowfat cheese. Then carrots on the side with hummus.0
