I just made this since I found the Xanthan Gum today. It made over 8 cups!!! Next time I'm going to try adding some cloves and ginger. It's different...but good, and filling. I'm also looking forward to eating it frozen. Thanks again!0

I had a pumpkin fluff recipe that was just pureed pumpkin, greek yoghurt and spices.
Low carb, low cal and low sugar.

YUM!! Only problem is we have to cook and puree the pumpkin first because we don't get canned pumpkin in Australia (or Jello pudding powder or Fibre One bars...)0

I want to make this, it sounds brilliant. What is xantham gum though? is that gelatine? and vanilla whey? that looks like a body building product.... i'd have to go to a body building shop to get that I think!0

You can play with the basic recipe. The basic recipe is as follows.
Ingredients:
2 scoops of Casein protein powder
2/3 cup of egg whites
~200 grams (or to taste) of fruit
As mentioned, casein powder works best, or at least most consistently.
For example, I made some blackberries, with no ingredients other than the above. That list of ingredients yielded that big bowl of fluff -- the bowl is about 4.5" high and 6" in diameter!
For this version, nutrition was as follows.
Calories: 418
Calories from fat: 26
Fat: 3 grams
Saturated Fat: 0.5 grams
Cholesterol: 20 mg
Sodium: 368 mg
Potassium: 601 mg
Carbs: 28 grams
Fiber: 11 grams
Protein: 67 grams0 -

I made my own pumpkin puree when the pumpkins were out and selling for almost nothing around Halloween now I'll have a use for it. sounds good. But I think i'd add a little cream of tartar to get a nice fluff0
