Just made this tonight. Since I need to watch my sodium and carbs, I modified things to make a lower sodium version. Here is my version for a lower sodium count. I believe the original one had about 646 mgs of sodium per serving. This recipe drops it by over 50% to 290 mgs per serving.
Slow Cooker Cream Cheese Chicken Chili (low-sodium version)
1 can Kuner's Black Beans (no salt added)
1 can Del Monte Corn (no salt added), undrained
1 can Rotel with Green Chilis (mild), undrained
1 T homemade Ranch Seasoning Mix (for recipe: http://www.5dollardinners.com/2011/04/homemade-ranch-dressing-mix.html)
1 t cumin
1 T chili powder
1 t onion powder
1 8oz package Light Cream Cheese
Drain and rinse black beans. Place chicken at bottom of pot, then pour our whole can of corn (undrained), Rotel, and black beans. Top with seasonings and ranch mix. Stir together. Place cream cheese on top. Cover with lid and cook on low for 6-8 hours. Sitr cream cheese into chili. Use 2 forks to shred chicken (it might just fall apart after cooking). Stir together and serve.
1c = 1 serving

Made this today and it is SOOO good... I can't believe the low calories. It definitely did NOT taste low fat. My husband (who isn't on MFP) said it is definitely a keeper. Thanks so much!! Keep the recipes coming!0
