    We call this one "Chicken Slop" - I don't know why the gross name seems to intrigue my kids, but everyone likes it. You can serve it over egg noodles for those who can eat all the carbs they want (not me unfortunately!):

    1.25 lbs chicken breast, cubed
    Cream of chicken soup - Amy's Organic or other healthy option
    3 c. veggies of choice (chopped carrots, celery, peas, etc - fresh or a frozen bag of mixed veg works)
    Egg noodles - 1/2 lb

    Put everything but the egg noodles in the crock pot and set to low for 6 hours, or high for 3 hours. Boil up the noodles before serving and add to the crock pot, mix well.

    Makes 8 servings of approx 1 cup at ~380 cals per serving

    Chicken tacos- 2 cups chicken broth, 1 pound chicken breast and 1 package taco seasoning. Mix seasoning and broth in the crockpot and add chicken. I cook it on low while I'm at work (8-9 hours) and then I shred the chicken.

    Then, of course add to tacos with all the fixins. :-) Also great for taco salads.

    We do faux quesadilla nights, where we take super low-cal whole grain wraps, add some beans, some cooked diced chicken (with whatever spices we have on hand...usually cumin, some coriander, oregano, etc. or plain old taco seasoning), some 2% shreddy cheese, lightly sautéed onions/peppers, maybe some corn. Pile it all on top of each other. Top with avocado slices & salsa verde. If you feel adventurous one night, or over a sunday afternoon, I would recommend making your own salsa verde...it's easy & delicious, and you can cut a lot of sodium this way!

    I don't know if anyone has recommended this, and I'm not about to go through 9 pages to see, but check out http://crockpot365.blogspot.com/. The blog is "A Year of Slow Cooking", the author, Stepanie O'Dea, cooks a crockpot meal everyday for a year, and still updates with new recipes every once in a while. And yes, she does have kids and comments on their reaction to each meal.

    I didn't read through all 9 pages, so I apologize if these are repeats....

    Shredded Mexican CrockPot Chicken
    3 lbs. Boneless Chicken Breasts (about 6 large or 8 smaller breasts)
    2 tsp. taco seasoning (I use Wildtree)
    2 cups salsa

    Spray the inside of your crock-pot with cooking spray. Place your chicken breasts in the crock-pot and sprinkle with taco seasoning, then pour on salsa. Cover and cook on low for about 6 hours. Shred the chicken. I like to serve mine over Blue Corn Chips with cheese and sour cream.


    Pulled Pork
    4-6# pork roast
    16 oz root beer
    Bottle of your favorite BBQ sauce

    Place pork and root beer in crockpot. Cook on low about 6 hours. Drain, shred and stir in BBQ. Goes great with sweet potato fries.


    This one has a few more ingredients...but even my husband who HATES mac n cheese loves it!!

    8 ounces elbow macaroni cooked and drained
    12 ounces half and half
    1-1/2 cups milk
    2 eggs
    2 cups shredded Cheddar cheese, divided
    1/2 cup shredded mozzarella cheese
    1 can cheddar cheese soup
    4 tablespoons of cream cheese
    4 tablespoons of butter
    4 tablespoons grated parmesan cheese
    1 teaspoon salt
    1/2 teaspoon black pepper
    1/2 tsp garlic powder
    1/4 tsp cayenne pepper
    1/4 tsp parsley

    Also, 1/2 cup Italian flavored bread crumbs mixed with 2 tablespoons melted butter for topping

    Mix all ingredients well in CrockPot. Sprinkle bread crumb topping mixture on top, then cover and cook on low for 5 to 6 hours, or until the mixture is firm and golden around the edges. Do not remove the cover or stir until before macaroni has finished cooking.

    Braised Short Rib

    Short Rib (boneless)
    Garlic Powder
    Black Pepper
    Paprika
    Red (dry) Wine 2 cups
    1 Garlic Clove
    1/2 Cup minced yellow onion
    Mini Carrots 2 cups
    Celery slices 1 cup
    Beef Stock 2 cups
    (serrano pepper if you like it spicy :love: )

    Rub garlic powder,paprika, and black pepper onto Ribs.
    Sautee the onions and clove of garlic in olive oil until translucent.
    Brown the short ribs within the mixture.
    Transfer all ingredients to slow cooker including mixture.

    Cook for 4-6hrs until it can be forked. Tastes well on mashed potatoes or Quinoa.

    You can also make great bolognese in crockpots or spaghetti with the sauce cooked into it.

    Roast pork (frozen solid - just brown in a little olive oil, and salt and pepper to taste) and put in crock pot on low with a bag of saurkraut (rinsed) and a few cups of apple juice and baby carrots. Serve with baked potatoes (cooked in microwave).

    BBQ ribs - take a rack of ribs and put them around the crock so they are touching and add your favorite sauce. They are fall off the bone tender. Serve with a big salad and

    A frozen turkey breast (browned/seasoned to taste with sea salt, pepper and poultry seasoning) simmered in a mix of 2 cups of low sodium chicken broth and 1/2 cup of cranberry juice. Thicken sauce (after cooking with corn starch or flour) and serve on top of the meat as gravy, Serve with baked sweet potatoes and green beans.
