I make this with the exception, that I bake it in a mini muffin pan. They make great finger foods. I did this for my children when they were little and it just kind of stuck. Also you can freeze them and then reheat them in the microwave in on a low temp. That way people can have something hot, healthy and on the go.0

I'm dating myself, but that is "Spinach Cheese Pie Olga" back from the Scarsdale diet days. One of the few things I could stand to eat from those recipes! Thanks for the reminder, I'll try it (the pie, not the diet) again!0
