Working mom needs kid friendly crock pot recipe's!!

My son, who has never met a vegetable he truly liked, likes this:
1 package of butter beans, picked through
2-32 oz. boxes organic vegetable broth
1 small turkey ham, cut into bite sized cubes
3-4 cloves chopped garlic
1 small purple onion quartered
3 stalks of celery, chopped small*
3 carrots, peeled and chopped small*
Throw it all in a crock pot--cook on high for one hour, then reduce to low for 6-8 hours. Add salt and pepper to taste when beans are tender, and cook for an additional 20-30 minutes.
*I chop small because he'll eat the veggies if they don't really stick out.
Ladle into bowls and serve with some homemade cornbread.0 -

You can even just throw in frozen chicken breasts, and cover them with water. Put in a couple garlic cloves and spices and then when you get home you have chicken ready to be shredded for chicken tacos or burritos/enchiladas. What kid doesn't like those!0

I know people put frozen chicken in a crockpot but if you ever research the proper way to thaw out chicken and cook it, it is not recommended...but then again, neither is most of the ways a lot of people actually thaw it out.

Salsa Chicken
1 can of black beans (drained)
1 can of corn (undrained)
1 jar of salsa (I use Pace Mild)
4-6 skinless boneless chicken breasts
Throw all the ingredients in the crockpot and cook on low for 6 hours. Once cooked shred chicken and serve over rice or on tortillas shells or tortilla chips for burritos or nachos. I also offer some shredded cheddar cheese (fat free for me) and lettuce. Very easy and my two preschoolers love it.
Crock Pot Meatloaf
2 lbs. ground beef (I use ground turkey)
3/4 c milk (I use skim)
3/4 breadcrumbs (I use Italian flavored breadcrumbs)
2 eggs
1 Package Lipton Beefy Onion Soup Mix (not prepared)
Combine all ingredients, shape into a loaf and cook in crock pot on low for 4-6 hours. I line my crock pot with aluminim foil and place the loaf on top. Makes for easy cleanup.

Shredded BBQ chicken is a favorite in my house too. We also do it with pork or beef sometimes. Making the sauce from scratch is a little healthier and better tasting, but you can always shortcut and buy a bottle of bbq sauce instead.0

If you like a little spicy - tangy this one is awesome:
EZ SLOW COOKER CHICKEN WITH PEPPERONCINI
Chicken Breasts
Small Red or White Potatoes
Olive oil, salt and pepper
Jar of Pepperoncinis (mild or spicy - you pick)
Cover bottom of Crock Pot with a drizzle of olive oil.
Place chicken breasts across bottom (as many as will fit or as many as you need for your family size)
Layer Small potatoes on top outer edge in a circle.
Salt and Pepper to taste.
Pour entire jar of pepperoncinis over the top.
Cook on low 8-10 hours.
