    I'm not the best photo taker.
    But Salsa lentils.

    1 Cup red Lentils
    1 tablespoons olive oil
    1/2 cups chopped yellow onion
    1 Tbsp cloves garlic, finely chopped
    1/2 cups chunky salsa
    1/4 Pack taco seasoning mix or 1/2 Tsp Cummin & 1/4 or more Tsp Cajun/ Cayenne
    So Easy and Yummy.


    Calories: 173 Carbs:32 Fat:0 Protein:12 Fibre:7

    I like to add golden flax seeds too.
    I make my own Taco Seasoning mix and my own salsa

    It uses condensed milk instead of the traditional method. Traditionally, it is made with milk solids (khoya) that can only be found in Indian store. This recipe should give good results.

    I've always said that if I could only eat one thing for the rest of my life, it would be tortilla chips with salsa. Boring is in the eye of the beholder, my friend. ;)

    Thank you! I'd imagine full-fat coconut milk or soy creamer thickened with agar or cornstarch could be a good vegan sub for the condensed milk, and earth balance or other vegan margarine for the ghee. Sounds delicious!

    Yep yep. Might I add it may be extra yummy with coconut milk..be sure to add sugar since condensed milk is the only sweet ingredient here.

    A bit boring and simple perhaps, but it was fun to make for dinner with my two year old and four year old daughters on the night that carnivore daddy was at a meeting. Raw broccoli, carrots, and cucumbers on toasted pita with a dollop of garlic hummus for dipping.

    Black beans, brown rice, tomatoes and green onions. One of my favorites.

    My boyfriend and i try to eat Vegan/Veggie once a week. So i made Spicy Garlic Eggplant w/ Tofu.

    This should make enough for four.

    1 package of firm tofu (sliced)
    1 egg plant (i cut it in half, then make thin slices)
    1 head of broccoli (the break up the top and cube the harder bottom portion)
    1 onion
    1 tbsp ginger
    1 tbsp garlic
    1 tbsp sesame oil
    2 packages of shirataki noodles
    1 packet of Spicy Garlic Eggplant Sauce (you can find it in the asian section!)


    Mix the tofu with the Spicy Garlic Eggplant Sauce. Put in the the fridge.

    I cooked all the veggies in olive oil first, along with the ginger and garlic. Then add a little water and sesame oil. I slide all the veggies to one side of the pan after they've reduced a bit.

    Add the tofu that been maranating for a bit into the other side of the pan. I allow them to head up seperately for a bit then mix them all together.

    Drain shirataki noodles and throw them on top. Mix then cover with a lid for abotu 5 mins. Then serve! :D

    Its about 175 calories per serving (makes 4 servings total)
    protein 13 g
    carbs 19 g
    fats 6 g

    You can make it vegan without the egg obviously :)
