    Marinate in italian dressing for 30-60 minutes. Then bake or grill.

    Poach it with vegetables in foil pouches.

    Bake on a bed of mushroom caps with lemon juice and a lemon pepper.

    I am making kabobs this week, here is the recipe:

    "Grilled steak and chicken that doesn't dry out on the grill, but stays moist and flavorful. These kabobs are simple to make, and delicious to eat. Skewered meat with peppers, onions, and mushrooms in a honey teriyaki sauce."
    Ingredients:
    1/2 cup teriyaki sauce
    1/2 cup honey
    1/2 teaspoon garlic powder
    1/2 pinch ground ginger
    2 red bell peppers, cut into 2 inch pieces
    1 large sweet onion, peeled and cut into

    wedges
    1 1/2 cups whole fresh mushrooms
    1 pound beef sirloin, cut into 1 inch cubes
    1 1/2 pounds skinless, boneless chicken
    breast halves - cut into cubes

    Directions:
    1. In a large resealable plastic bag, mix the teriyaki sauce, honey, garlic powder, and ginger. Place red bell peppers, onion wedges, mushrooms, beef, and chicken in the bag with the marinade. Seal, and refrigerate 4 to 24 hours.
    2. Preheat grill for medium-high heat.
    3. Discard marinade, and thread the meat and vegetables onto skewers, leaving a small space between each item.
    4. Lightly oil the grill grate. Grill skewers for 10 minutes, turning as needed, or until meat is cooked through and vegetables are tender.

    Bump.

    Just last night, I cooked chicken tenderloins with onions, mushrooms (for the bf), spinach, garlic, salt, and pepper and served it in a multi grain tortilla with pico de gallo, taco sauce, brown jasmine rice, fat free sour cream, and avocado. It was awesome! A great mock of one of our Mexican favorites!

    Cut it up into chunks, put it in the crock pot little dipper with grated ginger and curry. Just enough for one, yummy!

    So many ways to spice it up....

    Marinate with lemon juice and fat free italian dressing ,then broil or bake
    Marinate with Sazon, a drop of olive oil, chopped garlic, and seasonings (salt free)-Add Cilantro,if you like--its great!!


    These are my two favorite ways :)

    Chicken Cacciatore Ingredients

    4 skinless chicken breast halves, about 2 pounds
    Salt and freshly ground black pepper
    2 teaspoons olive oil
    1 medium onion, thinly sliced
    1 red bell pepper, thinly sliced
    1/2 pound white mushrooms, thinly sliced
    2 garlic cloves, minced
    1/2 cup dry white wine
    1 (14 1/2-ounce) can whole tomatoes in juice, chopped and juice reserved
    1/2 teaspoon dried oregano
    1/8 teaspoon red pepper flakes or more to taste

    Directions

    Rinse the chicken and pat dry with paper towels. Season the chicken with salt and pepper.

    Heat the oil in a saute pan over moderately-high heat. Brown the chicken on both sides, about 8 minutes. Remove the chicken.

    Reduce the heat to moderate. Add the onion and pepper, cover and cook, stirring occasionally, until the vegetables begin to soften, about 5 minutes. Add the mushrooms and cook, uncovered and stirring occasionally, until the mushrooms begin to brown. Add the garlic and cook, stirring, for 30 seconds. Add the wine and cook until reduced by half. Add the tomatoes and juice, oregano, red pepper flakes and 1/4 teaspoon of salt and simmer the mixture covered for 10 minutes.

    Return the chicken breasts to the pan and simmer, covered, until the chicken is just done, about 20 minutes longer.

    Pu in baking dish, pour a jar of salsa over it and bake!
    I serve it with brown rice.

    Tandoori Chicken

    125g fat free natural yoghurt
    2tsp tandoori powder
    1tsp curry powder
    1tsp olive oil
    squeeze lemon juice
    mix together and then add:
    2 chicken breasts either whole, sliced, chunks
    coat chicken completely, leave to marinade for at least 1 hour, more the better. Then bake, grill, BBQ!
