    Not sure if this was posted yet but the most AMAZING, SHREDDED CHICKEN TACOS.

    4 chicken breasts
    1 jar salsa
    1 packet of taco seasoning

    Cook on high in crock pot for 4 hours and the juicy chicken will shred off the fork as you take it out!

    Made this over the past weekend. Quick, easy and tasty.

    4 frozen chicken breasts
    20 ounce can of pineapple chunks
    1/4 cup of low sodium soy sauce
    1 tsp crushed red peppers(Optional)

    Cook on low for 3 to 4 hours or high for 2. Serve over rice, noodles or great cut up in salad.

    This sounds so good. I'm gonna try this one.

    I take bonless skinless chicken breasts and put them in with a bottle of medium Pace picante sauce, 1 taco seasoning packet & 1c brown rice. Set on low, let cook all day. About 1/2 hour before you are ready to eat, you take the lid off and turn it off and let the meat rest. Then shred the meat and put it in a whole wheat tortilla shell. May need a little salt at the end to taste.

    My best friend got me a slow cooker for my birthday - can't wait to try some of these recipes as well as the Texas pulled pork one I found on allrecipes.com the other day. Sorry I don't have the link, nor can I say I have tried it, but it looks amazing. :drinker:

    I love skinnytaste.com and this is one of my favorite reciptes EVER!!! I could eat it all the time and it is really easy!

    Crock Pot Chicken Taco Chili
    Gina's Weight Watcher Recipes
    Servings: 10 • Size: 1 1/4 cups • Old Points: 3 pts • Points+: 5 pts
    Calories: 203.7 • Fat: 1.4 g • Carb: 33.3 g • Fiber: 10.0 g • Protein: 16.9 g

    Ingredients:

    1 onion, chopped
    1 16-oz can black beans
    1 16-oz can kidney beans
    1 8-oz can tomato sauce
    10 oz package frozen corn kernels
    2 14.5-oz cans diced tomatoes w/chilies
    1 packet taco seasoning
    1 tbsp cumin
    1 tbsp chili powder
    24 oz (3-4) boneless skinless chicken breasts
    chili peppers, chopped (optional)
    1/4 cup chopped fresh cilantro

    Directions:

    Combine beans, onion, chili peppers, corn, tomato sauce, cumin, chili powder and taco seasoning in a slow cooker. Place chicken on top and cover. Cook on low for 10 hours or on high for 6 hours. Half hour before serving, remove chicken and shred. Return chicken to slow cooker and stir in. Top with fresh cilantro. Also try it with low fat cheese and sour cream (extra points).

    I serve mine with a few crunched up multi-grain chips and a small sprinkle of low fat shredded cheddar cheese!

    Just discovered the crockpot 2 months ago. Makes it easy to eat healthier.

    Throw chicken breasts in with hot sauce and cook on low. Shred chicken, put on roll and serve with celery and low fat blue cheese dressing. Spicy :)

    I just made this about an hour ago:

    Turkey Chili

    1 red Bell Pepper
    1 green Bell Pepper
    1 medium Red Onion
    4-6 cloves of garlic (pressed)
    1lb lean ground Turkey
    1 can kidney beans
    1 can pinto beans
    1 can black beans
    1 can diced tomatoes
    1 can tomato paste
    1 tsp salt
    1 tsp pepper
    1 1/2 tsp cayenne pepper
    1 1/2 tsp cumin
    1 cup water

    Brown the turkey, onions & garlic in a pan. Then add the mixture plus the rest of the ingredients in the crockpot for 4 hours on high or 6 hours on low.

    Super easy, filling and (best of all) healthy!

    8 servings: 274 cal, 34.6g carbs, 1083mg sodium
    6 servings: 365 cal, 46.1g carbs, 1445mg sodium
    This looked so yummy, but I worried that the sodium looked pretty high. Then I found this article, which says that draining and rinsing canned beans reduces the sodium by 41%. So this is definitely going to be on my menu!

    Crockpot Pork Tenderloin

    Ingredients
    • 1 (2 pound) pork tenderloin
    • 1 (1 ounce) envelope dry onion soup mix
    • 1 cup water
    • 3/4 cup red wine
    • 3 tablespoons minced garlic
    • 3 tablespoons soy sauce
    • freshly ground black pepper to taste
    Directions
    1. Place pork tenderloin in a slow cooker with the contents of the soup packet. Pour water, wine, and soy sauce over the top, turning the pork to coat. Carefully spread garlic over the pork, leaving as much on top of the roast during cooking as possible. Sprinkle with pepper, cover, and cook on low setting for 4 hours. Serve with cooking liquid on the side as au jus.
