    BUMP Always have frozen chicken breast in the house!

    Chicken Taco soup with beans.

    1 lb cooked shredded chicken seasoned with taco seasoning packet
    1 can of black beans, navy beans, or pinto beans rinsed
    1/2 bag of frozen corn
    1 can of diced tomatoes or Rotel if you like it really spicy
    1 cup cooked rice (optional)
    1 packet hidden valley dry ranch mix

    Combine in large pot and simmer on low for an hour. Top with reduced fat sour cream and/or cheese.


    I doubt it is low in sodium though due to the use of taco seasoning on the chicken and adding Hidden Valley dry mix, but it is so delicious.

    Marinated in Kraft calorie reduced sundried tomatoe and oregano and/or roasted red peper and garlic slad dressing then baked or BBQ'd is great you can also do it with shrimp.

    if you like chicken soup, orrington farms makes a low sodium line of soup broths, 140mg/serving, compared to upwards of 600-800 mg in normal boullion! I use that for all my curries, chicken soups, chili, etc

    might be worth grabbing some
  • marinate in tons of chopped garlic, olive oil, some lime juice, some chopped chipotle with a little of the adobe sauce that it comes in, and some fresh chopped cilantro. then grill. DELISH!

    Didn't read the whole thread but I like any my Husband LOVES Italian Chicken
    Just pour Italian dressing over chicken and bake....
    So juicy and tender!!!!


    I do this too as a marinade then grill . Also you can rub it with grilling spices first then pour Italian dressing over it in the crock pot.( You can use frozen chicken also and cook a little longer)

    I had a bottle of Italian dressing in my pantry and thanks to yall I cut up the chicken breast into strips. Placed in a baggie poured 1/2 bottle of dressing into the bag. Placed in freezer. It gets to double marinade (LOL) freezing and thawing.

    Right now I'm slow cooking some with chicken broth (use homemade or low sodium), red potatoes, garlic, and lemons (squeeze the juice and throw 'em in). I wish I had some rosemary.

    I don't use a recipe. I just add stuff until it looks delicious and slow cook the crap out of everything. Eight to ten hours on low.

    Diced chicken + mushrooms + a tin of tomatoes + mixed herbs + an onion + basmati rice makes a decent risotto. Worcestershire sauce and low sodium soy sauce make a nice kick in flavour.
    A chicken breast with a small cube of low fat cheese placed in an incision before wrapping with lean ham and then baking is tasty.
    You can make a healthier sunday roast with a breast per person, all you need then is veggies and gravy.
