    Made a half recipe of the pancakes tonight and they were the best pancakes that I have ever made. If I had not made them, I never would have known that they weren't "normal" pancakes. I am never buying Bisquick mix ever again and will be using this recipe from now on.

    These look really good! Can you use Egg Beaters or similar product for the whites? I keep regular eggs around--just hate to think of wasting those yolks.

    I used the carton egg whites for this and it worked fine. I agree with you about wasting that many yokes at once.

    'Bump' is just a way to add a comment so it will be in your topics so you can save the recipe (or whatever) for later use.

    I would think ricotta would probably work, but cottage cheese in the blender would probably be about the same. It's probably the texture of the cottage cheese you don't like.

    Ricotta should work, but after putting cottage cheese in the blender, I doubt if you could tell the difference. It's probably the texture you don't care for.

    Made these for breakfast this morning, I totally hate oatmeal, but wanted to try these to see if this could be a way for me to eat oatmeal. I have to say, it wasn't that bad, and the kids said it was okay. Thanks for sharing.

    So mine mixture is real watery. I used Irish Oatmeal brand. They are steel cut. I wonder if I need to add more than 1 cup to thicken it.
