I usually add a can of corn and a can of black beans, and then after shredding the chicken at the end stir in a container (6oz) of fat free plain greek yogurt for a little extra tang. Oh, and I make my own taco seasoning from this recipe: http://budgetbytes.blogspot.com/2012/02/taco-seasoning-034-batch.html and it's WAY better than the packet, plus cheaper (those packets were getting expensive, I make this a lot). One of my favorite meals, super high protein and delicious.0

Yeah actually frozen works best if you're going to cook it while you're at work - 8+ hours is a little too long for fresh chicken breast, but it's great for frozen. One note though - if you put frozen meat in the crock pot, put something else down on the bottom first, or risk it cracking! I usually put down some of the salsa, then the frozen chicken on top of that.0

i just made this exact same recipe a few weeks ago and i loved it, my kids and husband not so much but i used the left overs to make baked chicken and cheese chimichangas which were also excellent!0

I make this with a whole chicken....removing skin once the chicken starts cooking I add cilantro and cook it on top of the stove. We eat it over brown rice after refrigerating the sauce it creates and skimming off the fat before serving.0
