    Here's an idea when you want creamy taste without the guilt ;)

    Depending how you like it, you can adjust the spices to make it more or less spicy. I also sometimes add a very little cayenne and skip the peas (less calorie count) . Cornstarch makes the recipe thicker, so you can also play with that.

    I have a george forman grill so i will use mrs dash for seasoning. For lunch today had grilled chicken cubed with black beans salsa , lettuce and a little cheese rolled in a whole wheat tortilla. Or if I want chicken salad I grind upthe chicken with red onion and pickle, then either use light mayo on whole weat or 1/2 an avacado mashed and spread on the bread instead of mayo. Use the same chicken and shred with BBQ sauce on whole wheat bun. grilled chicken served over a bed of rice wiyh sauted veggies. I think for me just cooking 3 or 4 chicken breasts (boneless- skinless) then I just use half at a time.

    Greek Chicken Rolls

    4 boneless skinless breasts, pounded to 1/4' thickness
    2-3 c. frozen chopped spinach, thawed
    3-4 scallions, finely chopped
    1 t. dried dill
    3/4 c. crumbled feta cheese
    1 - 2 :smile: T. oilive oil
    Panko or Italian style bread crumbs
    Butter flavored PAM cooking spray

    1) Saute spinach & scallions over low heat until limp; add dill, and place in bowl.
    2) Add Feta cheese to spinach mixture
    3) Lay chicken breasts flat - evenly divide spinach mixture for the four breasts, place in middle - keeping approx. 1/8 inch from edge of chicken
    4) Roll up chicken breasts tightly - Spray with PAM - roll lightly in bread crumbs
    5) Place in shallow casserole dish coated with PAM - spray bread crumb coated breasts.
    6) Bake at 350 degrees for approx. 55 - 60 min. - (you may need to bake longer based on size and thickness of chicken)

    I'm thinking of cutting my chicken breasts into cutlets, spreading cream cheese on them and rolling them up (I got chive and onion cream cheese, or something like that lol) and then wrapping them up in a piece of bacon and then baking in the oven.

    Just thought of another one! Take a bag of broccoli florets, thawed of course, and layer the broccoli and 2 cooked chicken breasts, chopped in a pie dish. Sprinkle your favorite LF cheese on top. Mix the healthy heart bisquick mix, enough to cover, and pour on top. Bake until bisquick is almost fully done and sprinkle more cheese on top and bake the rest of the way through. Delicious!

    Grill them! Then put a a serving size of your favorite BBQ sauce on the side. I like it so much better than putting BBQ sauce on the chicken while grilling.

    I made great baked chicken breasts the other night. You could also grill or broil them, too.

    I marinated three huge chicken breasts in the juice of 2 lemons and 1 lime, with two diced Serrano peppers, some cilantro, ancho chili powder, fresh garlic, and just a dash of kosher salt. I left them in the fridge overnight and then baked them at 325 for about 40 minutes. I added the juice/marinade to the baking dish. They were really good with baby spinach and guacamole.

  • if it hasn't been suggested tandoori chicken is a great easy idea for chicken breasts. you can find a variety of recipies but basically yogurt + lots of spicy spices + lemon juice + chicken breasts then put them in a pan, cover with tinfoil, and crank the heat up super high for a brief time and it cooks pretty quickly. plus you can use the yogurt mixture in the pan for a sauce. :)

    I don't want to buy any special ingredients to do it though, so i'm going to substitute some low fat fetta for the gorgonzola and weight watchers bacon for the prosciutto. I do have the figs already.

    Hello,
    1 can each of low sodium cream of chicken, cream of mushroom and cream of celery soups
    Pour them all into a pot, stir in one can of water, 1 stick of butter (or butter substitute) and 2 cups of uncooked rice
    Cook over med/high heat until butter is melted. Make sure you keep an eye on it by stirring it so it doesn't stick to the pot
    Place 4 to 6 boneless skinless chicken breasts in a casserole dish and sprinkle them with Mrs. Dash seasoning. (I use lemon pepper or garlic and herb) But you can also use regular garlic powder or whatever seasoning you like. I am just trying to watch my sodium intake...
    Pour the soup mixture over the chicken breasts, cover with foil and let cook for 45 minutes @ 425 degrees. Uncover the dish and let it cook for 15 more minutes
    Serve with steamed veggies of your choice and enjoy. Oh, and save me a plate:tongue:

    Quick and easy! Brown boneless chicken in skillet then pour in a jar af Salsa and let it simmer for a few minutes. My family loves it served with rice.

    Chicken tacos instead of ground beef. I usually boil the chicken then pull it apart (shred) or slice it up. Add taco seasoning. Add any toppings and get the lower fat shredded cheese and whole wheat or multi-grain tortillas. Good stuff!

    I take a chicken breast, and slice it into long strips. I dip them in egg white then roll them in Progresso Panko Bread Crumbs(Italian Style) and bake them in the oven at 350 degrees. About 20 -25 minutes each side. I spray the pan with PAM. I use Ken's Steak House honey mustard(lite) salad dressing as a dipping sauce.
