    I haven't tried recipes using LC, but I do love a toasted english muffin topped with vegetable LC. Yum!

    Spread it inside a whole wheat low carb wrap and put eggwhite omelet inside, with sauteed mushrooms and red bell peppers and a slice of turkey bacon... BEST THING EVER!!

    forget LC with bread/bagel/ritz/english muffins. I love apples (Fuji) with LC Garlic and Herb wedge. I did not realize this until I ate one sample of this combination at Costco. Sweet, salty and crunchy Yumm!

    This isn't really a recipe, but I love eating the cheese with strawberries (and pear). It's a strange combo, but I love it!

    I like the blue cheese variety on celery sticks with a touch of hot sauce. It's all the flavours that accompany hot wings and makes a great low cal, high flavour snack.

    Stuffed portabello for 1

    Ingredients
    portabello mushroom (big! snap off the stem if it has one, dice up the stem and toss it in with the other diced stuff)
    butternut squash (about 1/3 - 1/2 cup, diced small)
    onion (less than a 1/4 cup diced small)
    sweet pepper (less than a 1/4 cup, diced small)
    1-2 wedges laughing cow cheese (lite!)
    1/2 tsp of oil

    Mix together the squash, onion, pepper and mushroom stem and fry in a pan with the oil until you get bored or the onions seem softish.

    Mix that stuff with the cheese in a bowl.

    Put the pepper inside-facing-up in a dish, pack that sucker full of the cheese-y veg mixture, (if there's extra you can eat it or bake it in a small dish alongside).

    Bake at some degree or other (350-400 is fine) for some amount of time (20-30 mins? keep an eye on it!) until everything is soft. Eat.

    I love making a substitute egg scramble in the microwave and then stiring a queso fresco wedge in at the end.


    My favorite sweet treat is to take a cinnamon cream cheese laughing cow wedge and mix it with a touch of nutella and then spread on apples or strawberries.
