besides spinach which i've had a love affair with since i was 3, my second fave veggie at the moment is brussel sprouts. i love them mixed with a little EVOO, sea salt, black pepper and zested lemon then baked until tender

Hmm I have 3 veggies that are my favourites most of the time...
1. Baked potato - I make it by rubbing it with extra virgin olive oil, sprinkling of salt and thyme over it, in the oven at 190 C for 25 minutes then drop it to 170 C and leave it for about an hour 15 minutes and it's deeeeeeeeeeelicious.
2. Rocket
3. Chilli peppers or jalapeños
I agree with FireballStrik, roasted cherry tomatoes with salt, pepper and oregano is indeed lovely (especially baby plum tomatoes) but I wouldn't include it in the veggie list as tomato is technically a fruit but maybe I'm just being pedantic
I am a bit disturbed though by how many of you listed Brussels sprouts as a favourite... NO one in our house can stand them, but I guess if you do like them then good for you! You're braver than we are considering how bad they smell... I shuddered just thinking about it...0 -

I'm eating asparagus every couple of days since it is in season...and I love it oven-roasted and slightly charred! My other obsession is kale!! Sauteed with garlic, olive oil, and pine nuts.0

Its usually artichokes.... But as of tonight... I really like that broccoli slaw, with poppy seed dressing...
Its good when you tired and don't want to cut up all the veggies for a salad at dinner. Just pour right into the bowl. I think thats what makes it my favorite right now. Going to steam some artichokes tomorrow. : ) I Like Japanese eggplant too, with olive oil & garlic salt broiled. Thats another favorite. That will be next week. And the week after that.. My sweet baby multi colored bell peppers.

Just went to the store tonight and bought a bunch of greens - collard, mustard, spinach and parsley.
I am beginning to enjoy lots of variety - especially fresh herbs like parsley.
I make a salad with Newman's Olive oil and vinegar and good quality tuna, garbanzos, lemon juice sometimes, and tomatoes, avocado, olives or whatever... yum.
I put it all in a snap-lock container and shake well before eating.
Make several salads at once so I can grab and go. One day I was too busy to stop working and I ate 4 salads! didn't blow my goal though... right on track.0 -
Oh yeah I like bell peppers - red. Sometimes with peanut butter.

I'm kinda vegetarian so I LOVE almost all veggies.

I've always been a huge fan of broccoli. Ironically, although I'm a cheese lover, most people I know only like broccoli with cheese, but I don't. I like the taste of broccoli by itself - steamed, boiled, or raw.0
