    my favorite way to prepare my green beans (and asparagus, my fave) is to saute it up with garlic powder, onion powder, black pepper, lemon zest & juice

    it's actually what I had for part of my lunch today :D

    I use Mrs. Dash Garlic and Herb Seasoning Blend, Salt-Free. The nice thing about salt free is you can put more seasoning on without over salting..

    I eat alot of veggies but I get tired of them so quickly because I find them boring. I need help to flavor them up so I can actually enjoy them. Preferably string beans but I am open to any kind of veggie....please help !
    I like mine with a bit of light ranch dressing on them. I also put it on potatoes & broccoi sometimes too. Love it on my beans though. I do eat my veggies plain usually, but this spices it up. Mmmm

    I really like them stir-fried with a bit of olive oil, and garlic, but if I'm making them plain for my kids, I steam them, and then spritz my portion with an olive oil mister, plus salt and cracked black pepper.
  • I made mashed cauliflower last night, pretty much how you make mashed potatoes but I used cooked cauliflower instead and it is really good. I think I even like them more then I like mashed potatoes!

    Try chopping some onions and cook them in a little butter in a sauce pan; add some sliced zuchini and a little water, & cook a little more until they start to soften. Cut some tomatoes and add them last since they don't need to cook much. When it's ll hot add some grated cheese and salt to taste. Yumm

    Adding on to the roasted veggie theme. . .

    With the olive oil, I use

    - Mrs Dash - original or garlic

    Or

    - McCormick's Vegetable Blend seasoning

    Or

    - Garlic & onion powder with basil or thyme or rosemary

    My daughter has a kid's cookbook that has "carrot fries" that are basically strips of carrots, sprinkled with olive oil and rosemary and then baked/roasted.

    I steam all my veggies and add spices mostly Indian spices pick up an Indian cookbook tons of ideas loaded with vegetables

    I find Aromat-(All purpose Savoury Seasoning) to be very good :) Its made by the company Knorr.

    yet another variation on the roasting theme:

    - toss the cut raw veggies - and a sprig of fresh herbs from the garden - rosemary, thyme or oregano - with a tiny amount of olive oil and 1 clove freshly minced garlic .

    I put them in a grilling basket and cook them for 10-15 minutes on the barbecue.

    Delicious!

    I love string beans and eat a lot of them. I had them for dinner last night. I always start by blanching them for 2-3 minutes tuntil tender-crisp. My two favorite ways to finish them off are:

    1/2 tsp olive oil and minced garlic, sautee and add beans to coat. Top with 1 tsp toasted almond slivers.

    OR

    drain water from pot used for blanching and return beans to same pot. Add 1 tsp butter and toss to coat. The leftover heat in the pot will melt the butter. Salt to taste.

    I find that using just a little real fat doesn't add many calories and is worth it for the taste.

    I can't believe its not butter spray is wonderful. I love the mrs dash suggestions. Putting those on my shopping list.

    Mrs. Dash! They are seasoning mixes with no salt, though I always add salt but you don't have to. There are 14 different seasoning blends, with that many choices you are bound to find a few you like. I use them on veggies, eggs, meat you name it. Give them a try and you can add flavor to your veggies.

    I like them with a little garlic. I put them in a pan with a little oil, and add either fresh crushed garlic or minced garlic, and heat it up, and eat! So good!

  • There are tons of spices and ingredients you can use to change it up, without adding alot of calories. My favs are: Fresh Lemon juice. I use that and maybe some parsley and pepper on my salads. Barely a calorie in lemon juice! Salt is a huge NO NO, so stick to things like hot sauce, mustard, vinegar for condiments, and use some lemon juice with cooked veggies! :) also you can use parsley, oregano, chili powder, or fresh garlic. There's sooo many options.

    My favorite way to cook veggies, is to use olive oil and minced garlic and Roasted red Pepper flakes ( either saute or bake) . I f I really want to get fancy I will wrap green beans or asparagus with Turkey bacon with the same seasonings!

    I like garlic and a little olive oil on mine. For roasted vegetables and potatoes I like to toss them with some olive oil, paprika, and garlic powder. That makes super delicious roasted potatoes!

    I add a hefty sprinkle of both onion and garlic powder (I live alone, so no worries about garlic breath), or sometimes I use a sprinkling of taco seasoning (the kind that comes in the packets, you know?). I can't wait til dinner to eat my veggies now :)

    Lemon pepper is my favorite. There is some salt in there so not recommended if your watching your sodium, but it is SO GOOD! Makes any veggie tast amazing.

    As a matter of fact I had green beans covered in lemon peopper just for lunch. It's also really yummy on hard-boiled eggs.

    ^^^This. Also, if it's string beans- try them raw....my fave way to eat them! :)

    This is exactly what I do. I'll also add in minced garlic and dried rosemary for extra flavor. :-)
