    Baked chicken nuggets! so good!

    Servings: 4 • Serving Size: 1/4th of nuggets
    Calories: 164.9 • Fat: 4.6 g • Protein: 22.1 g • Carb: 7.7 g • Fiber: 0.9 g • Sugar: 0.1 g

    16 oz (2 large) skinless boneless chicken breasts, cut into even bit sized pieces
    salt and pepper to taste
    2 tsp olive oil
    6 tbsp whole wheat Italian seasoned breadcrumbs
    2 tbsp panko
    2 tbsp grated parmesan cheese
    olive oil spray (I used my Misto)

    Preheat oven to 425°. Spray a baking sheet with olive oil spray.

    Put the olive oil in one bowl and the breadcrumbs, panko and parmesan cheese in another.

    Season chicken with salt and pepper, then put in the bowl with the olive oil and mix well so the olive oil evenly coats all of the chicken.

    Put a few chunks of chicken at a time into the breadcrumb mixture to coat, then on the baking sheet. Lightly spray the top with olive oil spray then bake 8 - 10 minutes. Turn over then cook another 4 - 5 minutes or until cooked though.
  • I personally LOVE to try different ways to season it to make it taste better or different....

    One of my faves is lemon pepper seasoning, sprinkle on liberally to both sides, cook, enjoy!

    Also, I went to Sam's club and found this wonderful seasoning called steak dust, I sprinkle that and seasoning salt onto each side of the chicken breast, then cook, and it gives it a different flavor, but is still super yummy...

    thirdly, there is a bottle of sauce you can buy at walmart called Dale's Seasoning, if you marinate your chicken breast in that for about a half hour or so before cooking that flavors it really well and gives you a third option....

    I LOVE chicken, I eat chicken regularly, so there is a whole host of different ways I season it to spice it up, but these are 3 of my favorites. :-) ENJOY!

    One of my husbands favorite meals. Pour a bottle of Sundried Tomato Dressing over Chicken Breasts, cover and cook in the microwave for about 20 minutes. Super yummy and no need for other seasonings. We usually make mashed potatoes and put about a spoonful of the juice over them.

    Also look at Pinterest. I found a lot of new chicken ideas on there.

    Marinate chicken in Balsamic vinegar, Dijon mustard, fresh minced garlic for 4 hrs, then grill !

    Crockpot Chicken Tacos

    4-6 chicken breasts
    1 envelope taco seasoning
    16 oz. jar salsa
    1 - 8 oz. block fat free cream cheese, cubed

    Put it all in a crockpot for 4 hours or so. It will come out sooooo creamy and delicious! Shred the chicken before serving. It serves 6 people, and each serving is only 169 calories, 3 grams of fat, 31 grams of protein.

    Marinate in bottled teriyaki sauce. Grill. Slice thinly. Wrap a few slices in lettuce leaves with some shredded carrots and chopped peanuts and maybe sriracha. Ta-da! Lettuce wraps!

    dip in lite honey mustard, then in crushed cornflakes. bake. it's a weight watchers recipe you can google it!

    throw in a crockpot with chicken broth celery & onions...shred when its done...add franks red hot sauce & half cup of the broth it cooked in...put on buns, wraps, or make lettuce wraps

    cook in crockpot with a jar of salsa, shred. this is so versatile, you can add corn and black beans too. use it on salads, wraps, tacos, burritos, enchiladas, dip pita chips in it...etc

  • try marinating your chicken breast in 1/4 cup terriaki sauce combined with 2/3 cup of fat free Italian dressing, then grill it. The flavor is great!

    I grill the chicken breast, then mix 2 cups of shredded chicken with 1 avocado, juice from 1 lime, s&p, 3 green onions, and lots of fresh cilantro. Flavor explosion!

    My serving is 1/2 cup of the chicken mixture in 1/2 whole wheat pita, and a plate of lots of fresh veggies, and my whole lunch will still come in at around 250 cal. Lean, and tasty, and filling.

    One of the new things we've been having is buffalo chicken pasta salad. You cook up 1-2 chicken breasts in the crockpot with Frank's or Texas Pete's (depending on preference) for 6-8 hours then shred it up and add it to the pasta of your choice and fat free ranch dressing til it is as saucy as you like.

    I also like to cook it with taco seasoning and salsa in the crockpot then shred it for burritos or have it with red beans and rice.

    You can also cook it with reduced fat cream of ____ (fill in the blank) soup in the oven and serve with rice and a veggetable.

    Or skinnytaste.com has some really yummy chicken nuggets that are awesome. I sometimes buffalo them for a little extra zip. I'm sure skinnytaste.com has other chicken recipes as well. Heck they have whole cookbooks devoted just to chicken. Maybe you can get one from your local library.

    I don't have an exact recipe, but pretzel crusted chicken is awesome!

    Check out the spice section the next time you're at the store. There are usually a bunch of mixed spices/rubs for various meats. They have awesome flavors and work on just about any meat you put them on.

    Also, it's well worth the ~$20 investment to pick up a cookbook like "Grill This, Not That". There are a ton of recipes for stuff to do with different foods, and you can probably adapt non-chicken recipes to chicken if you want.
