missfelicia6.....sounds really good. I need to try this. Do you add water to it? Most crock pot meals you do. You didnt mention it. I will add it though just in case. If you answer before I make it, then all is well. I cant wait. I am making this tomorrow

    Lime Cilantro Chicken Tacos

    http://delightsbites.blogspot.com/2012/02/lime-cilantro-chicken-tacos.html

I love this recipe! We made out own salsa for it (onion allergies), left out the jalapeno, and mixed up our own taco seasoning. So very good :)

    Cream Cheese Chicken Chili

    1 can black beans
    1 can corn, undrained
    1 can Rotel, undrained
    1 package ranch dressing mix
    1 tsp cumin
    1 Tbsp chili powder
    1 tsp onion powder
1 8 oz package 1/3 less fat cream cheese
    2 chicken breasts (I sometimes use 3)

Drain and rinse black beans. Place chicken at bottom of pot, then pour out whole can of corn (undrained), rotel, and black beans. Top with seasonings and ranch mix. Stir together. Place cream cheese on top. Cover with lid and cook on low for 6-8 hours. Stir cream cheese into chili. Use 2 forks to shred chicken. Stir together and serve.

This is soooo easy, and so good! Warms up great for leftovers. If you want to cut some calories, don't use the whole package of cream cheese. I've tried it with 1/2 and it's just as good! Also, I like to use a spoonful of fage greek yogurt and shredded cheese to garnish. Yum.
