Salsa Verde Chicken
The "serving" size and calories for wraps are in my diary. this serves about 6 (or more if they are portion controlled meals)
6 boneless skinless chicken breast in the crock pot. On top, add:
one can of black beans and one can of sweet corn, both drained & rinsed.
1 tsp cumin
a 16oz jar of salsa verde
1 can rotel (or diced tomatos)
cook on low for 8 hours. remove half of the liquid then add 3 ounces of cream cheese. DO NOT use low fat or fat free cream cheese because it will not melt properly.
Cook an additional 30 minutes on low or warm.
serve on wraps, or over rice or even potatos.0 -

Meatless chili! My recipe equals 2.5 ww points+ per cup!
(1) big jar jalapenos, sliced
(3) stalks celery, chopped
(2) sliced carrots
(1) onion, diced
(2) lg cans crushed tomato
(1) red pepper, chopped
(1) yellow pepper, chopped
(2) cans red kidney beans
(2) cans black beans
(1) can garbanzo beans
(4) TBSP oregano
(4) TBSP minced garlic
(1) TBSP sea salt
(1) TSP cumin
(1) TBSP black pepper
(2) roma tomatoes, sliced
(1/2) cup chili powder
put it all in the crock and cook it 8 hrs on low!
top with 75% reduced fat cabot cheese and light sour cream!
if you like meat, add some, I also have made it with tofu which I have pan fried with cooking spray, diced!
steak, sausage, hamburger, whatever would be great in it, too!

Also, this is my regular recipe, but I play with it depending on who I am feeding, some people do not like so much spice, so I will server jalapenos seperately:)0 -

Also, I made spaghetti sauce in the crock the other day and just added sausage for my husband in the beginning! You can easily use jarred/canned sauce and add yr meat (meatballs, sausage, chicken, etc) in the am and when you come home make some spaghetti and yr done:) If I use store bought sauce I usually cut up a ton of fresh veggies (whatevers on hand) to make it my own
The crock pot has done wonders for us in terms of not being tempted to order take-out! When dinner is cooking while yr at work, you can get excited about it cos you don't have to cook it. lol. and coming home to a delicious smelling dinner cooking is the closest to having a good little housewife my husband and I will ever have;)0 -

My husband loves this!!! It's a little high on sodium, but in moderation not a bad meal.
French Dip Subwiches
-2 packages of sliced roast beef deli meat OR 1 chuck roast (lower sodium content)
-1 can beef consume'
-1 can french onion soup
Throw it all in the slow cooker on low for 3-4 hours OR on high for 6-8 hours if you're using chuck roast.
Serve on hoagie buns w/ swiss cheese slices.

I use the crock pot a lot in the winter, but haven't yet this summer--some good ideas here for sure! Thanks everyone for some good ideas!
They make some good seasoning packets for the crockpot. The sodium is a little high, but they do make some tasty pork roast, pulled pork and beef stew ones that take some of the guess work out of seasoning.0 -

This is my absolute favorite slow cooker dish. Add some hot pepper flakes to it for a little more heat because thats really all the recipee is missing, serve with white rice. Amazing.0 -

Greek Chicken
Makes 6 servings
278 calories
4 potatoes, unpeeled, quartered
2lbs. chicken pieces, trimmed of skin and fat
2 large onoins, quartered (I used 1)
1 whold bulb garlic, minced
3tsp. dried oregano
3/4tsp. salt (I did not add salt)
1/2tsp. pepper
1TLB. olive oil
1. Place potatoes in bottom of slow cooker. Add chicken, onions, and garlic. Sprinkle with seasonings. Top with oil.
2. Cover. Cook on high 5-6 hours or on Low 9-10 hours

These are all such great ideas! I've always been in love with my crock pot, but have never tried the steel cut oatmeal in it before.
I love to make chili in mine.
I throw just about everything in there: pureed tomatoes/carrots/yellow peppers/celery, cooked lean ground turkey, chopped habenero and scotch bonnet pepper, lots of pepper, black beans, kidney beans, paprika & seasoning. I make it ahead the night before so everything really gets to stew, then I throw some baking potatoes in there and I heat on low for about 7 hours while I'm at work.
Jerk pulled chicken and vegetable soups are favourites, too.0 -
Does anyone have any pork loin crockpot recipes?
My family loves this one.
Pork loin
1 can chicken broth
1 jar apricot preserves
2 tablespoons Dijon mustard
1 onion, chopped
Mix all the ingrediants and then add the pork loin. Cook on low for 8 hours. Delicious!

Crock Pot Applesauce (from skinnytaste.com)
8 medium apples
1 strip lemon peel
1 tsp. lemon juice
1 cinnamon stick
5 tsp light brown sugar or agave
peel, core and cut apples, put it all in the crock pot on low for 6 hours.
Serves: 12 1/4 c each at 65.9 calories
Make it all the time. Not only is it soo good, it makes the house smell great!!0
