got a good recipe for semita by any chance?

Unfortunately no... i haven't been able to get that recipe from my mom. She'd make mostly quesadillas. But once I get that recipe for semita I'll share it. :)
lol, awesome. I've tried for years to get one from my wife's tia. She has a damned bakery and sends me semita from down south... but refuses to give me the recipe. "Oh it's not in english."

I CAN TRANSLATE IT AND SO CAN SHE!!! lol.

Lol!! I know, it's so difficult to get those dam recipes!! Such secrets!! I'd always ask my mom what's the recipe for whatever, which she'd always reply "No me acuerdo."

The only way I got a lot of her recipes was being in the kitchen RIGHT FROM THE START and writing down every step and ingredient! Otherwise, if I missed the beginning or whatever and asked what I'd miss... "No me acuerdo." Always her answer.

    Are you Salvadorean?

Wife is. What's funny is her mom LOVES to show me how to make what she makes... her tarejas are amazing. I still can't figure out her rice though. I went to culinary school, I've watched her time and tie again. I still can't clone it!

It's too funny though, you have to be there or you just miss all the little nuanced technique.

Lol!! Those little techniques are seriously important!!
Now since yesterday that you asked about semita, now I want some!! Hopefully if I ask, my mom won't answer with no me acuerdo. :stuck_out_tongue:

I went to a bakery today. They had some snickerdoodles up for grabs, 3x the diameter of a normal one. Amazing.

Snickerdoodles are one of my all time favorites. I've actually had two this week at work that were so sub-par and disappointing. Think I'm going to have to bake some this weekend to redeem the snickerdoodle in my mind. I have a recipe for a brown butter snickerdoodle that is phenomenal...

    Yeah, they're dangerous cookies.

    So simple yet so good.
However, so simple most people don't pay them the respect due, and they make terrible versions.

The first one that I had was from Cheryl's, it was part of a gift basket sent by our sales team, and it was the wrong color (way too dark), didn't have the requisite cinnamon sugar coating, and didn't taste like they used cream of tartar at all. I was so disappointed I actually thought maybe they mislabeled the bag it came in.

The second was from our bake sale and the cookie looked beautiful but was very thin and as such, seemed like it was missing flour or baking soda - or both...

Ah well. I've had many baking fails so I try not to judge too harshly, but it is disappointing!

i'm doing all of my cookie baking this weekend!

i have a cookie preservation question: i'm bringing the bulk of the cookies to some family 6 or 7 days after i bake them - would they stay the most fresh and yummy if i freeze them for the week, and then set them out to thaw (??) the day of or day before i make the drive to family territory, or would it suffice to just keep them in an airtight container for the week?

Are they chewy or crunchy cookies? I find chewy are fine to freeze, but crunchy are better off in an airtight container. Freezing the crunchy ones makes them not crunchy.

When I've frozen them they have, though I've only frozen oaty ones and not the chewy subway cookie style ones :)

I love making Christmas cookies. I made 4 kinds of dough today. I freeze the dough and bake right before I need them. Freezing baked cookies is lame. Don't do it.

I tend to hold out for the cookies my dad makes every Christmas. There's a special place in my journal for those yummy, sugary treats! (I avoid all creepy stairways and passages... I definitely don't blame you for that.)

I'm hoping to bake some sugar cookies soon, and my mother has already made four batches of different cookies. I love holiday cookies.

I can't remember if you said what kind of cookies they are? I would actually probably freeze just the dough, you could even put them on cookie sheets to stick them in the freezer (if you have space) then once frozen, put the balls in individual ziplock bags or tupperware containers, then thaw those and bake when you get where you are going. IMO nothing beats a fresh baked cookie...

I would vac pack any cookies being stored. Any cookie with any sort of fat content will take up ambient flavors.

So naturally, gluten free cookies don't need to be vac packed.

i'm doing choco chip cookies, white choco macadamia, and PB surprise cookies

ETA: i may try the whole seal in an airtight container with a piece of bread, keeping the different kinds separate of course. since i only need them to keep for a week or so, i don't know that freezing is my best course of action.
