Holidays & Cookies

Totes. OP wanted a cookie but didn't want it badly enough to justify the calories so she ate a pineapple lifesaver instead.
If I ever get to the point in my life where I think a pineapple lifesaver is an appropriate substitute for a cookie, then someone just come put me out of my misery please.
Plus cherry>pineapple ALL. DAY. LONG.
I read OP and wanted to cry.
P.s. I always liked lime
Better than cherry!? Or only after all the cherry and orange ones were gone? I would always eat the cherry and orange ones first and then the lime ones. I actually hate the pineapple ones so I would just give those to my brother. Was there lemon? I can't remember.

let's move past the life savers (which I admit I snack on too when I'm hungry and won't eat)...
and go back to the ooey batter cake cookies.
yes- those. nomnomnom0 -

Did you make the ones from the box of cake mix yet?
Haven't done any baking yet but there is a platter of cookies at a nearby cubicle which has those gooey butter cookies, snickerdoodles, and peanut blossoms... Three of my all time favorites!

No I've been flat out broke.... living off beans and rice. This is what happens when you let someone help you become fiscally responsible- they spend your money on your bills instead of on delicious food (LAME). I got paid today- so a trip to ze store is in order- I'm going to try to make red velvet ones for funsies. Need to do Christmas shopping for food too- but that means I need to figure out what we are doing for food.
Alas- we should have a Christmas food thread. That would be nice.0 -
JoRocka there is this thread going in the Ice Cream/Gelato Group...

Also in honor of you I chose the gooey butter cookie from the delicious platter...

I liked lime cause it tasted like Pine Sol.0 -
My cookie plan for Christmas party: make my own cookies and bring them so that way I at least know the calories in them but people don't give me *kitten* about not eating cookies0

Yep - lemon, that's right. That would have been the third to go. Cherry, Orange, Lemon, Lime, give away the pineapple.
-
Not sure what to do with the Pine Sol comment... I bet you are a gin drinker too?

happy dance- I started a Christmas Challenge in the main thread- like I did for Thanksgiving... i suppose- it should have been holiday- shrug whatever- a day you eat all the things challenge. EAT ALL THE THINGS.
I support and endorse your decision for ooey gooeyness.0 -

I spent this last weekend making sugar cookies from total scratch. Not very sweet at all, perfect alongside tea with milk. Im going to spend weekend after next making lots of them! This way I can easily control what Im eating when Im eating cookies this winter!
I want to make a batch with nuts and toasted sunflower seeds next time. Im not good at self-deprivation, But im Excellent at compromise and bargaining!
Oh my gosh these look delicious! I want your recipe haha0 -
Off to the gym and then to the supermarket to buy the things I need to make those brown butter salted snickerdoodles.
I'll post a pic to share my success (or failure) if I can figure out how to do it.

Made the chocolate gooey butter cookies yesterday - double batch. I think I like the regular yellow cake ones better, but these weren't bad.

YAY!
I made some on Saturday- I had some bad family news- and ate half them between Sat/Sun- then I brought the rest in to work- where they joined a plate of chocolate covered pretzels and some other variety cookies the secretary's husband made.
Mine were good- not as good as my friends- but good. - I have a box of red velvet- so i'm going to try that tomorrow me thinks.

I bet the red velvet ones will be good - since the main reason to eat red velvet cake is to have a delivery mechanism for cream cheese frosting, imo. This way the cream cheese and powdered sugar are just baked into the cookie...0 -
I spent all day baking cookies and things, which I will then bring to work with me tomorrow. After I bake more stuff, because I'm not done yet, just ran out of hours (and pans).
I started off with a glazed golden raisin and cranberry orange quickbread, modified from an online recipe. Turned out pretty well, if perhaps slightly overdone. Or not, I just don't like overly hard/crunchy things and the crust on this thing is impressive.
Second I made another modified recipe, this one for oatmeal fruitcake cookies. I had originally planned on making a Stollen this year but ended up not so I needed a way to use up the ingredients I already purchased. Hence these two recipes. If I could do it over again I would have replaced some of the white sugar with honey. Still good though, on the crisp/crunchy side without being overly dry.
Then onto what I had actually planned on making today. The knockout punch, my personal ultimate holiday cookie. I only make them once a year because it takes the rest of the year to work it off at the gym. Hot Cocoa Cookies, an obscene confection with no less than 4 forms of chocolate plus a marshmallow. And my secret ingredient of course. The recipe starts with an entire bag of chocolate chips and a stick of butter. Yep. They are horrendously bad and oh so good.
Tomorrow I'm making a batch of plain biscotti. One will go to a coworker cause she asked me to make her some for Christmas. The other will probably also go to work with me. If I can fit it in my bag with everything else lol.0 -

I made a second batch of those and had much greater success with the caramel by slicing it into about six thin portions rather than quarters. It seemed to melt and spread out much better within the cookie, and when the cookie cooled and the caramel returned to room temperature it seemed to be softer. So I solved the caramel issue but seemed to slightly overbake the cookies because they are crunchier than I would like. Maybe I'll get it right this weekend with batch #3.0 -

What I've found works the best on the caramel is using homemade as you can make softer, but slicing thin and helps a lot. Now the other thing I've done when I was too lazy to put the caramel in the center you can always drizzle it on top

Mine turned out really well which is lucky considering I hadn't made them before. I had Jersey caramels which I cut into 12 and rolled 3 pieces inside. I wasn't sure how to brown butter so I youtubed it and it turned out fine. I cooked them for 8 minutes and they were slightly brown on the edge and quite soft.
They were delish! I've been sharing them around.

We use a wonderful caterer where I work, and she always leaves a fabulous big box of homemade cookies for me at Christmas. I usually don't beat myself up about treats, but since I am SO close to my goal weight this season, I re-gifted the whole box to a colleague as a contribution to his staff party. I'm looking forward to next Christmas, when I will hopefully be well into maintenance, and able to indulge a little more ...0
