I wonder if in this imaginary scenario we have any recollection of the day before? Like do you open it and think “wtf was I even writing about?” Or do you look at it and just think someone else wrote it. More questions than answers now.

Yeah and really we couldn't ever know what it's like to be a woman, we could only know what the conscious experience of being a woman is like, and this would be very limited...
Most of what you are is happening Non-Consciously... We don't even know what it's actually like to be us, only the experience created by the brain...
Regardless to know what your experience is like would be a trip... I mean you processes the world differently... Even though consciousness would only give us a glimpse of what is really going on in your head...
