Same here! Passed my goal Wednesday. But not only is it Easter on Sunday, it’s also my birthday. Double whammy. I plan on enjoying the day with family anyway. 46 will be awesome (right?)!6

I'm trying to get my butt back out from under my finger rock and move. I need to lose the dreaded 40-50 pounds from medicine that they just now pulled me off of. Nice, right? Thanks, docs. As if I didn't have enough to deal with after back surgery last June. So, I get that I have to go slow and steady but I'm an impatient sort. So I could use all the support I can get!!! That's where you ladies come in!!!

Daisy, look up emeril lagasse. vegetarian chili, it's so good! What kind of chicken things are you looking for ? Anything not grilled? New marinade? Does it have to be chicken breasts? I made this, stewed chicken thighs with potatoes and carrots, it's one of my favs and go tos.

For the stewed chicken thighs I got six chicken thighs and I skinned them. Salt and pepper on them. Put a half tablespoon of olive oil in a Dutch oven, and sauté about a cup of chopped onions for a couple of minutes. Put the chicken thighs in meat side down and cook for a few minutes turn them over and cook for a few minutes more. Maybe 5-8 on each side. Add in about 10 to 12 ounces of tomato sauce, Half cup of water and 1-2 teaspoons of Italian seasoning. Bring it to a simmer and cover and cook for about half an hour. Then I remove the chicken thighs and add six servings of chopped potatoes and choped carrots, mix it into the sauce, nestled thighs back in, cover the pot and cook it for about an hour or until the vegetables are cooked
I have a lot of marinade recipes. I'll try to get them together and post them for you . Here are a couple for now.
Greek dressing/marinade
1/2 cup olive oil
1-1/2 teaspoons garlic powder
1-1/2 teaspoons dried oregano
1-1/2 teaspoons dried basil
1-1/4 teaspoons pepper
1-1/4 teaspoons salt
1-1/4 teaspoons onion powder
1-1/4 teaspoons Dijon mustard
3/4 cup red wine vinegar
The vinegar I put 1/4 cup and then adjust to taste. 3/4 is too much for me. Sometimes I mix in some balsamic too.
Pork tenderloin or chicken marinade. I've done both. If you use this for pork don't leave it for more than half a day or so because of the citrus. I use the balsamic and white vinegar in place of the Apple cider just because I don't like apple cider vinegar

Another favorite of mine for chicken breast is to cut them thin, dust in flour, brown them at little bit of olive oil and garlic. Then add in equal amounts of soy sauce brown sugar and balsamic vinegar. Cook until chicken is cooked through and sauce is a little bit thick. This is another one that I make a lot. It's absolute delicious and pretty easy. This is a picture of it with rice and green beans

These skinny white chicken enchiladas are really good. I use the corn and wheat tortillas from Trader Joe's to make them.. and I added extra chicken. I think I also put some of the cheese into the tortilla

Hello from Canada! Was going to be in great shape for my 40th... and here I am 8 years later saying the same thing. Ugh. Have 30+ lbs to lose. So far just doing it by diet, but would like to start working out soon when the weather warms up to go outside or I get some motivation to spend evenings at the gym.
My biggest challenge is sticking to it. I usually do great for three or four weeks and then get derailed by little cheats here and there and then slide back into old habits.

To make the best shredded chicken for anything that needs it or to make chicken salad. Slow poaching. Cut the chicken breast in the thirds, bring a pot of water to a boil and drop the chicken in. Let it come back up to almost a boil, shut it off and cover it for 6 to 8 hours. If I do it in the morning I'll leave it until night and or I do it before bed and take it out in the morning. It makes the best chicken for anything like this. Never dry or rubbery, very moist5 -
