I actually made some whole wheat biscuits tonight. Only 94 calories each. If they didn't have any calories, I would have made a bigger batch.... might make some more tomorrow. They are now past-tense biscuits at this point. Kind of explains why I've got bakeries on the brain....
This may be the first time I made square biscuits. It was such a small batch that if I had cut rounds, there would have been a lot of waste to re-roll. If it was a SLIGHTLY bigger batch I could have cut off the edges so they would have risen more uniformly. Not so much to look at, but they must have been tasty because I sure didn't have to worry about putting leftovers away.2 -

Easy peasy, and you can scale the recipe up. I scaled it to half so I would not eat a dozen biscuits. The recipe says I should have had five, but I had six, The MFP recipe builder says 94 calories each.
1 cup whole wheat pastry flour plus a quarter tsp salt and 2 tsp baking powder. Standard proportions.
Cut in 2 Tbsp cold butter.
Add a half cup buttermilk and mix minimally.
Turn out to a floured surface and pat into a square. Fold in half. Pat back out. Fold again. Pat back out. Maybe turn 90 degrees every now and then. Repeat this until you've folded it 15 times or so being careful not to work the dough hard. No kneading!
Cut with a sharp knife or biscuit cutter. If I had more dough, I would have made a small cut around the outside and discarded it. Then they would have risen more evenly instead of lopsided. Oh well. I patted it into a rectangle that make six little squares.
Plop onto an ungreased tray with parchment paper. You already had your oven preheated to 425; I forgot to say that. Cook about 11 minutes. Remove and put on the cooling rack. Guard them from invaders. Chow down. They would be really good with homemade blackberry jam. Because they say you can't live on bread alone. I used more butter because.... butter.
The biggest problem is they are SO easy to make, and they don't make much mess to clean up, so I could just keep making them and making them and making them. I need to find someone to help me eat them, but.... covid.
All the gentle folding makes the flaky layers.
The cold butter melts and lets out steam that makes those flaky layers more flaky.
Did I just say I'm flaky? Well, maybe just a little.
