I think my grandmother's gingerbread cake recipe has been lost, but I really want some.

Since we're talking old recipes. This is a cake with egg whites and chopped nuts that my MIL made. It was passed down in her family in South Italy. I've started making it, but can hardly get a photo--it disappears too fast.lwccdzt1pkuc.jpg

I can pass up most sweets but have a weakness for rugelach. I have some great stories from growing up, and we still have an inside family joke where we as, "Do you have any yeast?" I should make some. Pain in the rear as I recall, but I could use a new project. I'm going to buy a tube of frozen orange juice and some white flour next time I'm out because I am not ready to attempt whole wheat rugelach.

What I ~might~ experiment with some of them is rehydrating some of the huge amount of figs I dried this summer in some brandy and using that as part of a filling for some of those little rascals.

Any chance we could get the recipe? Looks and sounds like my kind of cake.

I'd have eggs fried in butter, on avocado toast with plenty of salt and a bit of nandos hot sauce, potato's and mixed veg with lots of salt and butter and for something sweet I'd have my boyfriends homemade butter cookies. Hmmmm.... I just really want butter😋

Sure--always happy to pass around a good recipe.

    Nonna's Walnut Cake

    100g butter
    75g sugar
70g potato starch (use corn starch as a substitution or increase flour)
    50g flour
    2 tsp baking powder
    1 tsp vanilla
    100g chopped walnuts or almonds
    1/2 tsp salt
    6 egg whites (around 200g)
    powdered sugar

    Mix butter and sugar
Add flour, potato starch, baking powder, vanilla, nuts and salt.
Whip egg whites until stiff and fold in the other mixture.

Prepare a roughly 10" round pan -- either butter and flour or use parchment paper
Bake at 340° for around 30 min until browned

Cool and sprinkle powdered sugar on top
