    It's just corn that has been infected with the fungus Ustilago maydis. Also known as corn smut fungus. The fungus does cause damage to the maize crop and causes economic loss to some growers. However, it's always been a delicacy, and since the demand has become more widespread, some people actually try to infect their plants intentionally.

    A woman brought some to a mushroom foray I was on a couple years ago. Yeah. I hang out with mycologists sometimes, and I love to collect wild mushrooms. I was a bit reticent to try it because -- corn smut, right? Awful name. But oh MY it was good. She had to order an extremely large quantity from a supplier in Minnesota. We miss her. She died a couple years ago, not from eating mushrooms.

    Another better sounding name is corn truffle. That sounds tastier, right?
