"A New Me" Group's August Food Challenge

For the month of August, our food challenge is to eat at least 5 servings of fruits and veggies a day.

This challenge is open to anyone who wants to join. We'll keep a running tally of each day we reach our goal. For example, the first person who gets their 5 daily fruit/veggie servings in will post this:

"Sunday, August 1

[Person's name here] - 1"

The next person will copy the post, add his or her name to the list, and so on. Each day you update, be sure to copy the most recent post so nobody's numbers get lost.

    I am pretty good about eating the fs & vs; but, this may keep me more than accountable...can we also try to give recipes or new ways of serving to spice things up?

    Here's one I found on MFP that sounds yummy,

    Cauliflower 'popcorn' - cut a bunch of pieces and put into a bowl, mix with some olive oil, light parmesan, a little bit of cayenne (or something more mild if you don't like spice) pepper and some sea salt! Roast in the oven for about half an hour on 350, now you got yourself some tasty finger food!

    Cauliflower 'rice' - put some cauliflower chunks in a food processor for a short amount of time, just until the size of rice. Sauté in a pan with your choice of spices (garlic is a fav of mine) and serve on the side with your meat and other veggies. I saw this idea on a fitness show and thought it was brilliant! I'm yet to try it but I can't wait! It's a great alternative to grains especially if you are trying to watch your carbs.

    It is Jill!! Dont give up before you start!! I know you arent a big F & V lover. Its all about incorporating them into your diet everyday and trying new foods that you have never had. Its eating more healthy and feeling more alert for me.....w/o my body is not going to let go of these last 10 lbs, (when I get there) I know. I am having trouble w/ the portions.. they seem massive and over load my cals. Having a variety bought and in the house to eat and the prep time is consuming. On the better side I feel less lethargic, Way FULLER, and I lost a lb.

    I ate yogurt & blueberries for a snack last eve. Couldnt even hardly taste the BB. Can you add raisins, fruit to your oatmeal/ cereal?Make stew a w/ a zillion vegs. What do you like? ..... start there:smile:

    Maybe the challenge rules should be revamped... it should be something like- a daily marked improvement count, unstead of 5 serv daily?

    I'm totally open to revamping the challenge if that makes it more useful for the people doing it, but it doesn't need to be done for me. I'm sitting this one out. :smile: I like your suggestions, though, for incorporating more F&Vs into my daily diet. I will work on that, but it's not something I'm ready to track right now.

    Robin and Kim, you're participating in this. Would you like to see it modified a bit?

    IDK - 5 a day seems good to me, but I am having trouble with serving sizes. I just made an egg white omelet with green, red, yellow, and orange peppers. Are the peppers in an omelet enough to be a serving? There were a lot. I used 2.5 servings of egg beaters and that was just enough to hold the peppers together..

    And I frequently eat 4 or 5 strawberries throughout the day. Is that a serving? Or half? I don't go by cups because I weigh everything. I would say 50g could be a serving, but that's just a guess...

    Robin, I think you can define your own serving sizes. I would definitely count the peppers in the omelet as a serving if it were me.

    I like it the way it is...I am able to get them in normally; but, I just have been laid up for a week with this virus...It's horrible, going on about 10 days of coughing and sore throat, finally got rid of fever and chills...spent 3 days literally in bed

    Yesterday, I felt better and then overdid it and walked 3 miles around the farm where my daughter boards her horse. So, todays' goal is groceries.

    I don't go by serving sizes either...I just try to incorporate them into the diet...have you seen the sample plate which has a 1/4 of the plate starch, 1/4 meat/protein and 1/2 F/V....just try that or you'll go mad

    Here's salads that I love:

    1) spinach, strawberries, sliced almonds, goat cheese and Maire's poppy seed dressing (1 V, 2 F) I count the avocado as a fruit

    2) chicken, romaine lettuce, black bean salsa, 2% cheddar cheese, a few crumbled tortilla chips, avocado and Marie's chipolte dressing (3 V) salsa has tomatoes and onions

    3) sliced cucumber with light sour cream, salt and pepper

    I have a link for portion size of veggies I will try to find if that's the route you want to go...otherwise, I use the plate method

    I say, you ate them, you count them...I don't feel it needs to be a certain amount....they just need to be eaten

    I get veggie pizza, would count that as 3 veggies 'cause I don't want to get hung up on all the numbers...point is, you didn't get cheese and sausage, you added veggies

    Robin I understand where your coming from. I eat 2 tbs. of raisins on my cereal.. when the serv size is 1/4 cup. I would explode with that many... if ya know what I mean.:explode:

    I really think is being awake/ couscous on making those healthier choices.

    I made tuna casserole last night for dinner .. my whole family likes it for some odd ball reason, but I threw in a can of peas... its not a serv. but it was a healthy choice.

    Jill Think I'll bough out of this one too. I dont want to lose it while I am doing better, this is to stringent for me.

    Why dont you girls come to other thread and we can go back to calorie counting , thats where it starts... anyways.

    Just a thought.

    Definitely don't overdo it today, Kim. Viruses are such a pain. All you can do is take care of yourself, treat the symptoms, and ride out the virus. I hope you feel better soon!

    Oh, I have a recipe that I will share...tastes just like the olive garden soup...made with carrots, celery, beans, tomatoes....so good and that's 3 veggies...will post later....kinda hungry for it now

    The plate consists of 1/2 vegetables and fruit, 1/4 protein and 1/4 grains...easy, easy easy

    Wednesday was a fail for me, I would estimate only 3 or 3.5 servings, so I am now down one day.
