1 cup...Per Serving: 305 calories 18 protein 3 fat 194 sodium 12 fiber 14 calcium (this is without adding noodles)

Seems like a lot of cals for 1 cup of soup...but, is really filling

Also, I do throw a few spinach leaves in for color...you could also add zucchini

I will also post a broccoli soup recipe that tastes just like Panera's; but, lots less fat...super yummy

I still eat soups in summer 'cause they are so filling

Only 2:30 PM and I already hit 5 servings today! It helped that I brought grapes, carrots, and an apple to work with me!

I'm also only up to 561 calories so far for the day and I'm not hungry....drinking a ton of water probably had something to do with that....

But I know I have to eat, so, I'll go poke around the kitchen...

I had my veggie soup today, cantaloupe, banana and raisins...will have salad for dinner with some asagio bread with tomatoes on top....5 servings...no problem:bigsmile:

Robin, I agree it's helps to have the stuff on hand...I hit the grocery store nearly every day:noway:

Kim thanks for the Nutrional facts!! Yes I'd like to see your broccoli soup recipe.. we have fav one also, but its not so healthy using Lipton Soup as a base....its so fast/simple to make and my whole family likes.

Good job girls... thought I was going to give up on today this morning my stomach was out of sorts... Maybe to many F & V:noway:

But I have a banana, apple, blueberries & yogurt so far and am going to have a massive salad for dinner w/ a slice or 2 of cheese pizza on the side. I know... its not even Fri. but my DH & I are to tired to cook.

    Kim Here you go:

    Deliciously Ageless!
Eat for beautiful skin, amazing energy, and great health for life. 4 Rules and 5 Recipes get you started

    Youth Boosters: Antioxidants // Fluid

    PREVENTION'S Italian Vegetable Soup

Soup is a great way to boost your intake of fluid and antioxidants in one fell swoop--especially if it's low in sodium and loaded with vegetables, as this one is.

    TIME: 1 hour 15 minutes
    SERVINGS: 12

    2 Tbsp olive oil
2 med onions, finely chopped (about 1 c)
2 med carrots, finely chopped (about 1 c)
1 rib celery, thinly sliced (about 1/2 c)
6 cloves garlic, minced (about 2 Tbsp)
3 med tomatoes (about 1 lb), finely chopped, or 1 can (14.5 oz) diced tomatoes
2 cartons (32 oz each) fat-free chicken or vegetable broth
1 Tbsp chopped fresh oregano or 1 tsp dried
1 Tbsp chopped fresh basil or 1 tsp dried
1 Tbsp chopped fresh thyme or 1 tsp dried
1/2 sm head cabbage, finely shredded (about 2 c)
    1 c bulgur
1 can (16 oz) no-salt-added white beans, such as cannellini or great Northern, rinsed and drained
1 can (16 oz) no-salt-added red or black beans, rinsed and drained
    1/4 c chopped fresh flat-leaf parsley

    1. Heat oil in a stockpot over medium-high heat. Add onions, carrots, and celery and cook 5 minutes or until vegetables are tender, stirring occasionally. Add garlic and cook 1 minute or until golden. Do not brown.

    2. Add tomatoes, broth, oregano, basil, and thyme and bring to a boil. Add cabbage and bulgur and reduce heat to a simmer. Cook 20 to 30 minutes or until bulgur is tender. Stir in beans and simmer 5 minutes longer. Season with parsley.

    Nutritional info per serving 142 cal, 6 g pro, 23 g carb, 6 g fiber, 3.5 g fat, 0.5 g sat fat, 0 mg chol, 362 mg sodium

Oregano, used to flavor this soup, contains up to 20 times more antioxidant power than other herbs, according to recent studies.

O yea, I haven't made it for awhile, I could never find the bulgur, so I used barley instead.

    Happy Friday all!!

Applewood bacon is soooo good...I buy Neuske's when it's on sale 'cause it's expensive and totally worth it...last time it was on sale I bought 6 packages...yes, I cook the whole thing and throw on baked potatoes, Sunday breakfast, salads...it does not go to waste...the last time I bought regualr bacon, it was like eating cardboard

I think that cooking light tries to limit fat and really boost flavors which is the case in this recipe when using the bacon.

Let me know how it turns out as I haven't tried it
