    OK, EPIC FAIL here. Number stays the same because I was up to 4 servings, still had dinner to eat....James got home from work, we went outside and started playing around with the bow and arrow with the kids, having a little competition, and James says to Jacob (my ten year old), "If you get this next shot in the red I'll take us all out for ice cream" And despite the fact that we were all missing the target like crazy, the little bugger focused and hit it. One time he offered him 20 bucks to put a hole in a red bull can from 80 feet away and he did. He only concentrates when something is on the line....
    So, we went out for ice cream and I had a 800+calorie brownie sundae with nuts and hot fudge....that was my pathetic dinner.

    Boo for not getting to change my number, but yay for fun family time!:tongue:

    That is a sweet story and beats eating a vegetable anyday...my number didn't change as I still don't feel well...called MD and started an ABX...hopefully, will be up to par by tomorrow...have to admit illness is good for alcohol and diet control

    FYI, real fruit juices like OJ and V8, etc...4 oz count as one serving...if I remember correctly that's how weight watchers (WW) counts it

    Also, for the dried fruit eaters...the portion size is smaller because it is a dried fruit with higher sugar concentration...so, don't follow what the container says...2 TBSP would probably be one serving...

    I ate alot more calories than I needed today, but I made salad as a side for dinner w/ tomatoes, cucumbers and red onions from our garden. Its the Ist time this year that they were all ripe at once. Then I added chick peas.. it was so GOOD!! :bigsmile:


    Does vegetable RITZ... vegetable straws/ chips constitute a veggie :laugh:

    Friday and Saturday I made it, so I added 2.
    Today (Sunday), I haven't tracked my food at all, but thinking back, I can come up with about 5, so I'm counting that too, putting me at 6 on the 8th. Only 2 failures so far. Not too shabby.

    This challenge has definitely opened my eyes. I thought I was ALWAYS getting 5 fruits and veggies, but apparently I failed twice while TRYING, and some of my successes came from specifically making that choice BECAUSE of this thread.
    So, I guess I wasn't getting 5 a day without even trying like I had originally thought!

    Here's a great recipe...tastes just like olive garden's soup...look almost all the veggies in one serving

    Pasta Fagiolo

    We always make ours in the crock pot, but you can also make on the stovetop as well.

    Start with some olive oil in bottom of pot.

    Add 1 whole diced onion
    2-3 carrots sliced
    2-3 stalks celery sliced.
    2-3 finely minced smashed cloves garlic
    ¼ teaspoon flaky red pepper…or add more to taste
    2 or 3 bay leaves…leave whole then take out after done cooking
    ½ teaspoon dried thyme
    2 cups water or low sodium chicken stock
    2 or 3 cans Great Northern Beans rinsed well (we use 3 cans because of large family, but 2 works also)
    Take 1 28oz can of whole peeled tomatoes; pour all juice from can into pot. Squish ½ of the actual tomatoes and add those to pot. Save the other half for another recipe.
    Salt to taste
    Pepper
    Small Chunks of ham (optional)
    Small noodles (optional)

    You can cook for several hours. I start mine in the morning and let it cook all day. Or turn it off midday and then reheat for dinner.
    No matter how many times we have made this it comes out slightly different, so
    Add more of the spices as you go along according to taste.

    If you have some chunks of ham to add, that’s great! Also, separately cook some small noodles, and serve Pasta Fagiolo over them..(or not, whatever you prefer). I wouldn’t add the noodles to the whole pot of Pasta Fagiolo because they will absorb all the moisture.

    When serving top with grated cheese and enjoy. Very healthy!
